Place the freeze-dried strawberries, gluten-free oats, protein powder and nuts in a food processor.
Pulse the ingredients until the mixture is ground to coarse powder.
Pour the raw agave nectar (or honey) and vanilla extract into the food processor. Pulse a few more times until the liquid is evenly absorbed and the mixture starts to stick together. You can also do this step in a bowl if you prefer.
Lay a piece of parchment paper on a flat surface or baking sheet.
Make sure your hands are clean and roll the mixture into golf balls sized balls. Place your homemade protein balls on the parchment paper and continue this process until you use all of your energy ball mixture.
Rinse your hands after every few balls are formed. When your hands are too sticky, the balls don’t form well because the mixture will stick to your hands.
Yields 15 protein balls. Limit serving to 1-2 balls.
