To make this delicious creamy spinach artichoke chicken casserole you will need a few basic kitchen essentials and a handful of ingredients.
- 1 lb boneless skinless chicken breasts, cubed or shredded
- 1 1/2 cups raw cashews
- 2/3 cups cashew milk
- 1/4 cup avocado oil
- 1/4 cup nutritional yeast
- 1 1/2 tsp onion powder
- 1 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1 yellow onion, chopped
- 6 cloves fresh garlic, minced
- 10 oz fresh spinach, chopped
- 14 oz can artichoke hearts, drained and chopped

You will also need a food processor, a large skillet, and a casserole dish. This is the food processor that I have and love. You can find it online here: food processor.
The best part about this recipe is that it is flexible. For the chicken, you can use rotisserie chicken, chicken thighs, or leftover chicken from the previous night’s meal. I tend to avoid dairy when possible, so I am using nutritional yeast and cashew milk in this casserole dish. Nutritional yeast is a deactivated yeast that adds a cheesy, savory flavor to dishes. It’s a great source of B vitamins and protein and is especially popular in vegetarian, and dairy-free recipes.

How to Make Healthy Cheesy Chicken Artichoke Casserole
First, preheat the oven to 350 degrees F.
Then soften the raw cashews in hot water for 15-20 minutes.
Next, if you are making this recipe with raw chicken and not leftover chicken, cut the chicken into bite-sized pieces. Cook the chicken in a large skillet over medium-high heat, then set aside.
While the cashews soften in the hot water chop the spinach, cut the artichoke hearts into smaller pieces, dice the onions, and mince the garlic.
Once the cashews have softened drain them with a fine mesh strainer.
Then add the cashews to the food processor with the cashew milk. Cashew milk tends to be creamier than almond milk but feel free to use any dairy-free milk you prefer.
Add the avocado oil and nutritional yeast to the food processor.
Lastly, add the onion powder, garlic powder and salt.
Blend the creamy cheese sauce ingredients until smooth, and set aside.
Make the Chicken Spinach and Artichoke Mixture
In a large skillet, heat a drizzle of oil over medium heat. Add the onions and cook for 3-5 minutes, stirring occasionally, until translucent.
Next, add the garlic to the skillet and cook for 1-2 minutes until fragrant.
Add the chopped spinach and stir constantly until wilted. Continue adding the spinach one handful at a time, ensuring each bunch wilts before adding more.
Once all the spinach is wilted and incorporated, stir in the artichoke hearts.
Stir the artichoke mixture until combined.
Then add the cooked chicken to the skillet.
Finally, add the cream sauce and remove from the heat. Stir until all of the ingredients are fully incorporated.
Transfer the creamy spinach artichoke chicken mixture into a baking dish. Cover with aluminum foil and place in the preheated oven for 20 minutes.
Remove the foil from the dish for the last 5 minutes in the oven to create a slight browning around the edges of the dish.

Instructions
- Preheat the oven to 350 degrees F.
- Soak raw cashews in hot water for 15 minutes to soften
- Cut chicken into pieces and cook in a large skillet. (or use leftover or rotisserie chicken)
- When cashews are softened drain with a fine mesh strainer
- Place cashews in a food processor with dairy-free milk, avocado oil, nutritional yeast, onion powder, garlic powder, and salt. Blend until smooth.
- In a large skillet, heat the onions until translucent, then add the garlic.
- Cook the spinach one handful at a time with the onions allowing them to wilt before adding more.
- When all of the spinach is wilted add the artichoke hearts to the skillet. Stir to combine.
- Then add the cooked chicken to the skillet.
- Add the cashew cream sauce to the skillet, stir, and remove from the heat.
- Transfer the artichoke spinach chicken mixture to a casserole dish.
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil after 15 minutes.
