To make this easy healthy birthday cake cookie dough bites recipe you will need a few basic kitchen tools and simple ingredients.Ā
- 1/2 cup cashew butter
- 3 Tbsp raw honey
- 1 cup almond flour
- 1 tsp vanilla extract (or 1/2 tsp vanilla bean powder)
- 1/2 tsp almond extract
- 1/4 cup dark chocolate chips
- 1/4 cup rainbow sprinkles, plus more for rolling
- optional – vanilla protein powder

Cashew butter, delivers a smooth creaminess and a healthy dose of good fats, keeping you energized without overpowering the delicious birthday cake taste. This is my favorite cashew butter.
Did you know that many common sprinkles contain added food dye, artificial flavor, and artificial color? Processed foods often contain things like soy lecithin, palm oil, or hydrogenated palm kernel oil. These things are not ideal, nor are they anything I want for myself or my family. How to Make Cookie Dough Bites
First, combine the cashew butter and the almond flour in a large bowl.

Next, add the honey, almond extract, and vanilla extract to the bowl.

Then add the colorful sprinkles and dark chocolate chips to the mixture.

Stir the cookie dough bite mixture together thoroughly. Then place the mix in the fridge to chill for 30 minutes, or 10 minutes in the freezer if you are in a hurry. The balls are much easier to roll when cold.
Roll Birthday Cake Cookie Dough Bites
Remove the chilled cookie dough mix from the fridge and use a small cookie scoop to scoop even amounts of mixture for balls.

The cookie scoop ensures equal portions for your birthday cake energy balls. First, scoop the balls onto a sheet or parchment paper or wax paper.

Then, with clean hands, roll them into smooth balls, about 1-2″ in size.

Next, place a fill a small dish with more sprinkles and roll the birthday cake cookie dough balls into the sprinkles to coat.

They sound delicious and would love to make. However I do have a couple questions first. Eating the raw cookiie doughnut reminds me of eating raw cookie dough made with reg flour is this the same or is the clean flour good for this.
Also is organic ORGAIN protein powder the same as what you recommend. Orgain vanilla is not a pleasant taste at all. .
Iām trying to get real clean with my eating but all this change of products used to make these goodies is to say the least overwhelming.

Ive tried Orgain, and its not my favorite to be honest. I really like the Truvani one that I mention, Ive been using it a lot lately! š .. As for the other question, this is made with almond flour, which is simply ground up almonds, so it may have a mild nutty flavor. I prefer this over traditional flour hands down.
