Homemade Healthy Lemon Bars Recipe

Lemon Bar Ingredients:

  • Lemon Bar Crust:
    • 2 cups cashew flour
    • 1 Tbsp Coconut Palm Sugar
    • 2 Tbsp coconut oil (measured solid)
    • 1 egg
    • 1 tsp vanilla extract
  • Lemon Bar Filling
    • 4 eggs, room temperature
    • 1 Tbsp lemon zest
    • 1/2 cup fresh squeezed lemon juice
    • 2 Tbsp coconut flour
    • 1/8 cup coconut palm sugar
    • 2 Tbsp Coconut milk

As always, let’s start by gathering our ingredients. A quick rundown on just a few of our lemon bar ingredients:

  • Cashew flourย – this is a great alternative to almond flour and a staple in a paleo lifestyle as well as clean eating diet. It is made from nothing but cashews which provide you with those healthy fats. If you can’t find this in your local grocery store (often you can’t) you can get some online here: cashew flour.
  • Pasture raised eggs – when buying eggs I try to get pasture raised. These have a deep orange yolk instead of yellow because the hens are allowed to roam about the pasture and soak up the sun. They tend to be much better for you then the conventional eggs.
  • Coconut Palm Sugar –ย ย this is a healthier alternative to processed refined sugars. Coconut palm sugar also falls low on the glycemic index and is not as sweet as other sugars. You can find it online here: coconut palm sugar.

Making Easy Lemon Bars

  1. Pre heat the oven to 350 degrees. 

Crust

  1. We are going to make the lemon bar crust first. Grab those ingredients.
  2. Melt the coconut oil for the crust. Just a few seconds in the microwave will work. 
  3. In a small bowl, combine all of the ingredients for the crust only and mix thoroughly until everything is sticky. 
  4. Line an 8×4 pan with parchment paper and scoop the mixture into the pan. Use a silicone spatula to press the crust down evenly. 
  5. Bake for 10 minutes and remove from the oven. Leave the crust in pan.

Filling 

  1. To make the lemon bar filling grab a larger bowl and mix together the coconut flour and palm sugar.
  2. Add in the remaining lemon bar ingredients and use a handheld mixer to whip on medium for 2 minutes. Make sure to use coconut milk from a can, and use the liquid part not the hardened manna part. Also, make sure to mix until no clumps remain. how to make lemon bars, best lemon bars
  3. Pour the lemon mixture over the crust and pop back into the oven. pour lemon filling over lemon bar crust
  4. Bake for 22 minutes then shut the oven off. Let it sit in the oven as it cools for ten more minutes.
  5. Remove from the oven and let your lemon bars cool fully in the pan. 
  6. Once they are cooled, pull out the parchment paper and cut into squares. cut lemon bars into squares
