- 1/2 tsp vanilla bean powder
- 1/4 cup colorful sprinkles

Oat flour is a whole grain, low carb, gluten-free flour option with protein & dietary fiber. It is made from ground oats. You can often find oat flour at the grocery store, or online here: oat flour.

Stir the mixture thoroughly. If it’s too dry or crumbly, add 1-2 Tbsp of water to the bowl.
Once well-combined, let the mixture chill. This helps it firm up for easier rolling into perfect balls. Aim for 30 minutes in the fridge, or 10 minutes in the freezer if you’re in a hurry.
Roll the Birthday Cake Energy Balls
Once your mixture has had its chill time in the fridge (30 minutes) or freezer (10 minutes), it’s time to transform it into delicious energy balls.
Grab the container and get ready to get your hands dirty, or use a spoon if that’s more your style.
Here’s a handy tip: for perfectly uniform, bite-sized treats, use a small cookie scoop (like this one: cookie scoop) to portion out the mixture. This ensures your energy balls are all the same size, making them not only visually appealing but also perfect for portion control if you’re watching your calorie intake.
Roll each of the funfetti cake batter energy bites into 1″ balls and place on a piece of parchment paper.
Then place the fun sprinkles in a small dish and roll each ball in the dish to coat the healthy energy balls.
