Ingredients:

  • 1 (64 oz) bottle Spicy Tomato Juice (V8 or similar)
  • 3 stalks celery (chopped)
  • 5 Roma tomatoes (chopped)
  • 3 large carrots (chopped)
  • 2 cups green beans (ends removed & chopped)
  • 1 head cabbage (core removed & chopped)
  • 1 (15 oz) can garbanzo beans (AKA chickpeas)
  • 4 cups of water
  • 3 cloves garlic (chopped)
  • 1 Tbsp olive oil
  • salt & pepper to taste

First things first. Let’s gather your vegetable soup ingredients. We are making a tomato based vegetable soup with cabbage. Make sure to use as many fresh and organic vegetables that you can. And for the spicy tomato juice, try to find one that is as clean as possible and minimally processed. Also, watch the sodium content because some tomato juices are high in sodium. Read the labels and use your best judgment. The same goes for the garbanzo beans, read the label and aim for the one where the only ingredient is garbanzo beans. We don’t need or want added unnecessary ingredients.

  1. Cut and chop all of your vegetables. I like to do all the cutting, chopping and measuring ahead of time. This way I don’t feel rushed to get them ready for the pot.   2. In a large (8qt) stock pot, like this one here, heat the olive oil.
  3. Add the carrots,ย  onions, and celery to the pot
  4. Cook for a few minutes until fragrant.
  5. Next, add the water, spicy tomato juice, garlic, tomatoes, green beans, cabbage, and garbanzo beans (chickpeas). vegetable soup with chickpeas, vegan vegetable soup, homemade vegetable soup
  6. Once you have all of your vegetable soup ingredients in the pot go ahead and add your salt and pepper to taste.

  2. Cook for a few minutes until fragrant
  3. Add water, juice, garlic, tomatoes, green beans, cabbage, and garbanzo beans.
  4. Add Salt and pepper to taste
  5. Bring to a boil, stir and simmer covered for about 1-2 hours
  6. *tips- to reduce simmer time, chop veggies and cabbage into smaller pieces
