These gluten free coconut macaroons are made with all simple and clean ingredients and no added sugar. They are naturally sweetened with pure maple syrup, and we are using unsweetened shredded coconut.

Ingredients:

  • 3 cups shredded unsweetened coconut
  • 1/4 cup pure maple syrup
  • 1 tsp coconut extract (optional)
  • 1 tsp vanilla extract
  • 2 Tbsp coconut oil
  • pinch of sea salt

Chocolate Glaze –

  • 1/2 cup coconut oil, melted
  • 1/2 cup raw cacao powder
  • 1/4 cup pure maple syrup

Some shredded coconut brands add extra uneccessary sugar. Opt for unsweetened coconut when possible.

Directions:

  1. First, preheat the oven to 350 degrees. 
  2. Combine all of the coconut macaroon ingredients in a food processor and pulse until combined. shredded coconut macaroons
  3. Next, line a baking sheet with parchment paper.

Gluten Free Coconut Macaroon Chocolate Glaze

While the macaroons are cooling we can make the chocolate glaze. 

  1. Whisk the melted coconut oil, cacao powder and pure maple syrup until fully combined. You may need to do this in a small saucepan on low heat to keep the coconut oil in the liquid form. If your coconut oil is fully melted you can mix in a small bowl. melted chocolate sauce for macaroon recipe

How to Make Gluten Free Macaroons with Chocolate Glaze

Ingredients

  • 3 cups shredded unsweetened coconut
  • 1/4 cup pure maple syrup
  • 1 tsp coconut extract (optional)
  • 1 tsp vanilla extract
  • 2 Tbsp coconut oil
  • pinch of sea salt  

Chocolate Sauce

  • 1/2 cup coconut oil, melted
  • 1/2 cup raw cacao powder
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat oven to 350F
  2. Combine all the ingredients in a food processor and pulse until combined.
  3. Line a baking sheet with parchment paper.
  4. Using your hands, form 12-14 balls and set them on the baking sheet.
  5. Gently, press on the tops to flatten into a macaroon cookie.
  6. Bake the macaroons for 15 minutes or until the turn a little brown on top. When hot they may brake so let them cool before transferring them.
  7. While the macaroons cool make the chocolate glazé,
  8. Whisk the melted coconut oil with the cacao powder and the maple syrup until combined.
  9. Next, using a spoon or a small jar with pour spout, drizzle it on the top of the macaroons.
  10. Let cool for 20 minutes.
  11. Enjoy!
