Greek Quinoa Salad for Clean Eating

This Greek quinoa salad is so yummy and easy to make. Quinoa recipes are one of my favorites because quinoa is so versatile. You can easily mix things up as far as complementary ingredients and quinoa is a complete protein. Yay for healthy eating.

I will admit that I absolutely love quinoa. I’d take quinoa over any other grain. Not only is it healthy, but it is easy to make and you can eat it hot or cold. You can also eat quinoa any time of day – for breakfast with bananas and nuts or for lunch or dinner. Often, I make a big batch of quinoa and eat it throughout the week in different variations and with different meals.

Ingredients:

Makes 4-6 servings

  • 1 cup quinoa
  • 2 cups water
  • 1 tsp salt
  • 1 large cucumber, seeded and diced
  • 1/4 cup red onion, diced 
  • 2 roma tomatoes, seeded and diced
  • 1/2 cup crumbled feta cheese (omit for vegan option)
  • 1/2 cup kalamata olives, quartered or sliced
  • 1 clove garlic, minced
  • 2 Tbsp red wine vinegar
  • juice from one lemon
  • 1 tsp dried oregano
  • 1/4 cup olive oil
  • black pepper (optional)

How to Make Quinoa Salad

Gather all of your ingredients listed to make Greek Mediterranean quinoa salad.

  1. First, you will need to rinse your quinoa. Often, I will let it sit on the counter in a bowl of water for a few hours and then strain it with a fine-mesh strainer like this one HERE.
  2. When you are ready to prepare your quinoa salad you will heat 2 cups of water on the stove until it boils. Add salt to the water.
  3. Add the rinsed quinoa to the boiling water and reduce heat. Allow it to cook over medium heat for 15 minutes.
  4. Remove from heat and set aside for 5 minutes and then fluff with a fork. clean eating quinoa recipes
  5. Next, in a large bowl, combine the quinoa, cucumber, red onion, tomatoes, feta cheese, and olives.  quinoa salads
  6. In a smaller bowl or mason jar, mix together the minced garlic, red wine vinegar, lemon juice, oregano, olive oil, and pepper. Whisk (or shake) until blended.

This Greek quinoa salad would pair perfectly with Greek Chicken Skewers, or alone if you prefer a vegan quinoa salad option. You can also make this on Sunday for easy meal prep and take to work during the week.
