How to Make a Delicious & Healthy Chicken Skewers Recipe
You are going to love this chicken skewers recipe for a few reasons. First, this chicken kabob recipe can be easily cooked in the oven, on the grill or even in the air fryer or Ninja Foodi. No matter how you choose to cook your chicken skewers, it’s the kabob marinade that really matters. These would be actually be considered greek chicken kabobs based on the seasonings we are using.

Ingredients:
- 2 large boneless skinless chicken breasts, cut into appx 2″ pieces
- 1 large zucchini, cut in half lengthwise and then cut into 1″ pieces
- 1 red onion, cut into 1″ pieces
- 1/2 pint grape tomatoes
- 1 clove garlic, minced
- Juice from 1 lemon
- 2 Tbsp red wine vinegar
- 1/4 cup + 1 Tbsp olive oil, divided
- 1 tsp dried oregano
- salt and pepper to taste

Before I even get into this healthy air fryer recipe I want to mention that I recently got a Ninja Foodi. It is amazing! The Ninja Foodi is like the holy grail of all kitchen gadgets. It is an Instant Pot/pressure cooker, an air fryer, and a dehydrator all in one. Just about the only thing it doesn’t do is wash the dishes when the meal is finished. I realize that not everyone has a Foodi, and more people have an Instant Pot, or an air fryer so keep in mind that this air fryer chicken kabobs recipe can be made in either a traditional air fryer, a Ninja Foodi, in the oven or on the grill. So versatile, right?
Cooking with an air fryer or Ninja Foodi is an easy way to make your favorite foods quickly and stay healthy. If you are in the mood for delicious grilled chicken skewers in the dead of winter or on a rainy day but cant fire up the grill – then break out the air fryer.
Instructions:
Gather all of your ingredients listed to make Greek chicken kabobs.
Preparing your chicken skewer marinade:
- Place the cut-up chicken in a medium-size bowl.
- In a separate bowl or mason jar, mix together the:
- garlic,
- red wine vinegar,
- lemon juice,
- oregano,
- ¼ cup olive oil.
- Whisk (or shake) the chicken kabob marinade until blended.
- Pour the marinade over the chicken.
- Toss to coat.
- Allow the chicken to sit and marinate on the counter for 15 minutes or in the refrigerator for 2 hours to overnight.
Preparing Your Chicken Shish Kabobs
- When you are ready to cook, cut and prep the vegetables and toss in 1 tablespoon olive oil.
- Sprinkle with salt and pepper.
- Arrange the cubed chicken breast, zucchini, onion, and grape tomatoes on wooden skewers.
- Air Fryer: If you are using an air fryer or Foodi check to ensure that the skewers fit in the basket of your air fryer. You may need to trim them.
- Grill: If cooking on the grill, then you should be fine with the length of your wooden skewers.
- Oven: If you are cooking your chicken skewers in the oven arrange them on a baking sheet lined with foil. Also, if your skewers are metal you are fine, but if they are wooden then you should cover the exposed tips of the skewers with foil to prevent them from burning.
Cooking Your Shish Kabobs
- Air Fryer: Place your chicken skewers in the air fryer at 380 degrees for 15 to 18 minutes. Carefully flip them halfway. Check chicken for doneness (internal temp of 145 degrees) and serve warm.
- Grill: Cook your Greek chicken skewers over medium heat for 5-10 minutes on each side until cooked through. To prevent your chicken from sticking to the grill make sure your grill is clean, (heat and scrub with a wire brush). You can also rub a little olive oil onto the grill grates before you place the shish kabobs onto the grill.
- Oven: Cook your chicken skewers at 450 degrees for appx 15 minutes. To add a slight brown crisp to the chicken you can finish the kabobs off on broil for 2 minutes before removing from the oven.
