How To Make Healthy Coconut Cups (No-bake)

To get started, let’s go over the simple ingredients needed for these no-bake coconut cups. These simple ingredients are easy to find in any grocery store, making for an affordable delicious paleo snack!

These ingredients are broken up into two parts: ingredients for the base and ingredients for the filling. Let’s go over what you’ll need!

No Bake Coconut Cups Base:

Dates are an amazing way to sweeten up this recipe. They’re full of healthy nutrients like fiber and potassium, and they add a delicious sweetness to these no-bake coconut cups. Plus, they’re a healthy alternative to refined sugar. Simply soak 1 cup of dates in warm water for 30 minutes and drain.

You can’t have coconut cups without the coconut! For this recipe, you will need 5 tbsp of unsweetened shredded coconut. Be sure to use unsweetened coconut, as the sweetened variety will make the recipe too sweet and add in processed sugars. This is the brand that I like. Cacao powder adds a depth of flavor that brightens up this recipe. Adding 4 tbsp of cacao powder to this healthy coconut cup recipe is a great way to enhance the flavor without overpowering it. You can find this cacao online as well, here: cacao powder.ย 

To give these coconut cups a boost of sweetness, add in your choice of natural liquid sweetener. I recommend ยพ cup of honey or natural maple syrup. If you are watching your sugar intake you can skip the sweetener if you like since the dates are already naturally sweet. 

Coconut Cup Filling:

The coconut in this recipe is carried throughout for a mouthful of coconut in every bite. You’ll want to add 1 + ยผ cup shredded coconut to the filling.

For a delicious boost in coconut flavor, add in 1 cup natural coconut yogurt. It’s the perfect way to elevate the flavor of your no-bake coconut cups. 

When making the coconut filling, add a natural liquid sweetener of choice to taste. Again, I recommend using 2 tbsp of honey or natural maple syrup. When opting for honey make sure to go with raw and unfiltered. If you can get local honey that would also work well. This is my ‘go-to’ honey and can be found online here: Raw Honey.ย 

In order to achieve consistent flavor, you will need to use 2 tbsp of melted coconut oil for the filling. This will ensure that your filling is properly flavored and will not be lacking in any way. Coconut oil is an amazing healthy fat and it helps to increase HDL (good cholesterol).

Directions

  1. Place all the ingredients for the base in a medium bowl and use a hand blender pulse until well combined. The result should be a sticky paste. Set aside. coconut cups recipe made with dates
  2. Set all the ingredients for the filling in another bowl and stir with a spoon to combine.
  3. Take a muffin pan, the best choice is using a silicone one because itโ€™s much easier to remove them. But if not, a good choice is using a regular muffin pan with muffin liners.
  4. Put 2 spoons of the base batter in each muffin mold, using a spoon, press until all the surface is well covered and level.press coconut cups base into muffin mold

  6. Refrigerate for 2+ hours for the coconut cups to harden and take shape.

Easy no bake coconut cups recipe - clean eating, gliuten free and dairy free treat

Ingredients

Coconut Cup Base

  • 1 cup dates
  • 5 Tbsp unsweetened coconut
  • 4 Tbsp raw cacao powder
  • 3/4 cup raw honey

Coconut Cup Filling

  • 1 1/4 cup unsweetened shredded coconut
  • 1 cup unsweetened plain coconut yogurt
  • 2 Tbsp raw honey
  • 2 Tbsp coconut oil

Instructions

  1. Soak the dates in warm water for an hour to soften.
  2. Combine the ingredients for the base together in a large bowl.
  3. Mix until it has a consistency of thick paste. Use an immersion blender.
  4. In a separate bowl combine the filling ingredients until well combines
  5. Press 2 Tbsp of base ingredients into the bottom of silicone muffin cups
  6. Top with the filling mixture
  7. Place in the refrigerator for 2 hours to chill/set
  8. Garnish with fruit, jam or shredded coconut
