- an eggplant, halved & sliced into 1″ pieces
- a butternut squash, peeled, halved & sliced into 1″ pieces
- 1 (16oz) package of mushrooms, cleaned
- 1 bunch radishes, trimmed of stems & roots
- 4-6 carrots, peeled & cut in half lengthwise
- 1 bunch asparagus, ends trimmed
- cooking spray oil
- 1/2 cup olive oil
- salt & pepper to taste

As always, let’s first make sure that we have all of our vegetables picked out. Granted, you can probably use any veggies that you like but I think these are the best vegetables to roast. I tend to keep a lot of various vegetables in my fridge at all time because I also like to sautee them in the morning with eggs. But that’s for another day.

- Setting the temperature to roast vegetables could vary depending on the veggies you choose. For this recipe, we will need to preheat the oven to 400 degrees.
- Next, cover the baking sheet with aluminum foil. A baking sheet is the best pan for roasting vegetables because it is simple and easy to cover. Everyone should have at least one baking sheet in their kitchen. This also makes clean up easier.
- Spray with a nonstick spray. This is my all-time favorite cooking spray. Did you know that avocado oil has a super high flashpoint? It’s perfect for roasting. You should be able to find it at your local grocery store with all of the other oils.
- Make sure to clean and trim all of your vegetables first.
- Then lay your vegetables out on the baking sheet.
- Drizzle the olive oil over your vegetables and lightly toss to coat.
- Sprinkle with salt and pepper to taste.
- Arrange your pan-roasted vegetables closely but do not overlap them.
How Long to Roast Vegetables
To know how long to roast vegetables at 400 degrees you will want to aim for 20 to 30 minutes based on your preference. Check on your sheet pan-roasted vegetables a few times to make sure they do not overcook but reach a nice tenderness.
When finished remove from the oven and arrange on a large platter or simply plate for your guests and serve warm.
