  • a butternut squash, peeled, halved & sliced into 1″ pieces
  • 1 (16oz) package of mushrooms, cleaned

As always, let’s first make sure that we have all of our vegetables picked out. Granted, you can probably use any veggies that you like but I think these are the best vegetables to roast. I tend to keep a lot of various vegetables in my fridge at all time because I also like to sautee them in the morning with eggs. But that’s for another day.

  4. Make sure to clean and trim all of your vegetables first.
  5. Then lay your vegetables out on the baking sheet. 
  6. Drizzle the olive oil over your vegetables and lightly toss to coat.
