Oats are the star of these no-bake bars. I recommend using gluten-free rolled oats, also known as old-fashioned oats, for their classic chewy texture. However, if you only have quick cooking oats on hand – they’ll work just as well in this no-bake recipe. Both types of oats offer a delicious base for these no-bake treats.

Almond butter adds a nutty richness to these bars, perfectly complementing the chocolate and oats. But don’t limit yourself to almonds. Feel free to experiment with other kinds of nut butter like natural peanut butter, cashew butter, or even sunflower seed butter. Just be sure to choose a natural option without added sugars or oils for the best flavor and nutritional benefits.

For a rich and intense chocolate flavor, I love using dairy-free dark chocolate chips with 70% cacao. But feel free to experiment with your favorite chocolate chips. Whether you prefer semi-sweet chocolate chips, milk chocolate, or even white chocolate, these bars are a canvas for your chocolate cravings.

Chia seeds and flax seeds are nutritional powerhouses packed into tiny packages. These superfoods are loaded with fiber for better digestion, heart-healthy omega-3s, and even protein (especially in chia). By adding them to these no-bake bars, you’re giving your treat a serious health boost.

Dried dark cherries add a touch of sweetness and a pop of fruity flavor to these bars.
