To keep this recipe gluten-free I am using almond flour instead of all-purpose flour. Since they use almond flour and lack gluten, these cookies will be slightly denser and chewier, offering a delightful textural difference from big, fluffy, all-purpose flour cookies.

For the sugar, I always prefer coconut sugar over refined white or brown sugar. Coconut sugar boasts a slightly lower glycemic index than refined brown or white sugar, for a potentially gentler rise in blood sugar.

This recipe uses dairy-free dark chocolate chips which allows them to be vegan chocolate chip cookies with applesauce. But feel free to use milk chocolate chips or your favorite semi-sweet chocolate chips.
