To make this healthy banana muffin recipe you need a few wholesome ingredients and some basic kitchen essentials. This recipe is dairy-free and gluten-free. These ingredients are all commonly used in healthy gluten-free baking.
- 3 overripe bananas
- 1 egg, room temperature
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 2 Tbsp coconut oil, melted
- 1/2 tsp vanilla bean powder (or 1 tsp vanilla extract)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/3 cups gluten-free baking or all-purpose flour
- options – 1 apple, chopped into small pieces
For this banana muffin recipe with applesauce, I find gluten-free 1:1 flour works best. It offers a convenient substitute for both all-purpose and baking flour blends. For the applesauce, you can use either homemade applesauce or storebought. You can use my easy applesauce recipe or simple unsweetened applesauce from the grocery store. I tend to avoid cinnamon applesauce and sweetened. Go for unsweetened applesauce where the only ingredient is apples.
Coconut oil is a better choice than vegetable oil when it comes to healthy baking. Look for unrefined coconut oil.

How to Make Easy Banana Muffins With Applesauce
First, preheat the oven to 350 degrees F.
Then in a large bowl mash the bananas with a potato masher, or the back of a fork.
Next, add the egg, and the applesauce to the bowl.
Add the maple syrup to the banana applesauce mixture.
Then add the melted coconut oil, and stir to combine the wet ingredients.
Next, add the flour to the bowl.
Add the vanilla, baking powder, and baking soda.
Stir to combine. You can use a hand mixer, or simply stir with a spoon or spatula.
Optional Applesauce Banana Muffin Add-Ins
Chop a medium apple into very small pieces. You can use any apple, this is a Honeycrisp apple.
Gently fold half of the chopped apples into the muffin batter.
Other add-in options that you could use are chocolate chips or walnuts, depending on your personal preference.
Next, line a muffin tin with muffin liners. Then spoon or scoop each of the muffin cups with 1/4 cup of batter.
Then sprinkle the rest of the chopped apple pieces on top of the muffins.
How Long to Bake Applesauce Banana Muffins
Place the muffin pan in the oven and bake for 20-25 minutes, until they pass the toothpick test.
Remove the muffins and transfer them to a cooling rack to cool.
