You will also need a cast-iron skillet or other oven-safe skillet.

How to Cook 5 oz Bacon-Wrapped Filet in the Oven

First, preheat the oven to 425 degrees F.

Then pat the beef filet dry with a paper towel, and season with salt and pepper. Next, wrap a slice of bacon around the filet. You will only need one or two slices of bacon depending on the size of your steak. I am using a 5oz filet which only requires one strip of bacon. Secure the bacon with toothpicks.

Then heat the oil in a cast iron pan or skillet. Cook the steak to give it a good sear. Allow for 1-2 minutes for both sides of the steak. The perfect sear is a deep, golden-brown crust that’s crispy on the outside and tender on the inside. A well-seared steak will have a rich, complex flavor profile and a satisfyingly chewy texture.

The key to achieving the perfect sear is to cook the meat over medium-high heat for a short period to caramelize the sugars on the surface. This creates a flavorful crust while preserving the juiciness of the meat. The edges of the bacon will also begin to render which will allow the bacon fat to add its smoky flavor to the filet.

Then carefully, transfer the hot skillet to the preheated oven, using an oven mitt or heat-resistant silicone gloves to protect yourself from burns.

How Long to Cook Filet Mignon in the Oven

After searing the bacon-wrapped filet mignon on the stovetop, transfer it to a preheated oven to finish cooking. Depending on your desired level of doneness, cook for approximately 10-15 minutes. For a medium-rare steak, aim for an internal temperature of 130°F (54°C). Use a meat thermometer to ensure accuracy and enjoy a perfectly cooked steak every time.

Note: These are general guidelines. The actual cooking time may vary depending on the thickness of the steak and the specific temperature of your oven. Using a meat thermometer is highly recommended to ensure the desired level of doneness.

Ensure even cooking and a crispy bacon finish: While the bacon-wrapped filet cooks in the oven, use a pair of tongs to carefully flip it over halfway through for even cooking. For an extra crispy bacon layer, you can also opt to place the filet on its sides during the initial searing in the skillet.

After cooking the bacon-wrapped filet mignon to your desired doneness, remove it from the oven and let it rest for a few minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Make sure to remove the toothpicks before serving.
