Chicken and Broccoli Alfredo Casserole Recipe Ingredients

To make this healthy chicken broccoli alfredo bake you will need a few simple ingredients and basic kitchen essentials. 

  • 8oz brown rice penne pasta, measured dry
  • 3 cups broccoli florets, washed and trimmed
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2-3 cloves garlic, minced
  • 1 jar of alfredo sauce
  • 1/4 cup cashew milk
  • 4 slices nitrate-free bacon
  • ​salt and pepper to taste

Of course, this recipe can be made with any pasta, but to keep it gluten-free I love gluten-free brown rice pasta. This is the pasta that I use: brown rice pasta

When it comes to chicken, you have many options. You can use rotisserie chicken, leftover chicken, or even pre-cooked chicken. I tend to prefer boneless skinless chicken breast. How to Make Chicken Broccoli Alfredo Casserole

First, preheat the oven to 350 degrees F. 

Then cut the bacon slices into bite-sized pieces.

In a large skillet, cook the bacon over medium heat until all fat is rendered.

Remove the cooked bacon from the skillet with a slotted spoon, and transfer it to a paper towel to drain. Leave the bacon grease in the skillet.

Next, cook the chicken in the bacon grease until done. When the chicken is fully cooked add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.

Then remove the chicken and garlic from the skillet and set aside. Clean the skillet of the grease, and place chicken, and garlic back into the skillet.

Next, bring a large pot of salted water to a boil over medium-high heat. Add the pasta, and cook for 6 minutes, aiming for al dente. That is when the pasta is tender but not fully cooked.

At 6 minutes, add the broccoli to the boiling water with the pasta and cook for 3 more minutes.

Drain the pasta and broccoli together.

Transfer the drained cooked pasta and broccoli to a large bowl.

Then add the cooked chicken and garlic to the bowl.

Pour the jar of alfredo sauce in with the broccoli, pasta, and chicken. Stir to combine with the creamy sauce. Add salt and black pepper to taste. 

Then divide the cooked bacon, and add half of the bacon to the bowl.

Add the cashew milk to the bowl with the pasta and chicken mixture. Cashew milk is a lighter, healthier alternative to heavy cream that would often be used in a recipe like this.

How Long to Bake a Chicken and Broccoli Alfredo Casserole

Transfer the chicken and broccoli casserole mixture to a baking dish

Cover with foil and bake for 20-25 minutes. Remove the foil for the last couple of minutes and sprinkle the top of the casserole with the rest of the cooked bacon.

  7. Add cooked chicken to the bowl with the pasta and broccoli
  8. Then add the alfredo sauce and half of the bacon
  9. Add the cashew milk and stir to combine
  10. Transfer the mixture to a casserole baking dish.
  11. Cover with foil and bake for 20-25 minutes.
  12. remove the foil for the last few minutes, and sprinkle with the remaining bacon.
  13. serve and enjoy
