Gluten Free Squash Casserole Recipe

Zucchini Squash Casserole Recipe Ingredients
To make this yellow squash casserole you will need a handful of ingredients that can easily be found at the local grocery store. If you grow zucchini in your home garden then this is a great way to use up those green and yellow zucchini.
- 1 lb ground beef
- 1 Tbsp olive oil
- 2 yellow summer squash, diced
- 1 green zucchini squash, diced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 – 14.5 oz can fire-roasted tomatoes (do not drain)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 cup dairy-free sharp cheddar cheese

How to Make a Healthy Squash Casserole Recipe
First, preheat the oven to 400 degrees F.
Then cook the ground beef in a large skillet over medium-high heat until brown and crumbly.
Drain the cooked beef using a fine mesh strainer and set aside.
Next, heat the oil over medium heat, and using the same skillet, cook the squash, onion, and garlic.
Stir the squash and onion mixture and cook until translucent and tender.
Then add the cooked ground beef back to the skillet, along with the fire-roasted tomatoes, and spices.
Stir until thoroughly combined and cook for another 2-3 minutes.
Next transfer the gluten-free summer squash casserole mixture to a casserole baking dish.
Sprinkle the top of the casserole with the cheese. I love this cheese here: Dairy-free cheese. It is both a dairy-free and vegan cheese. If you don’t mind dairy, then you can use any regular type of cheese you would like.
Place in the preheated oven and bake for 15-20 minutes until the cheese is melted and the gluten-free squash casserole is golden brown and bubbly.
Easy Gluten-Free Summer Squash Zucchini Casserole
This gluten-free dairy-free cheesy squash casserole is packed with flavor and makes a perfect side dish or main meal.
The chili powder and smoked paprika give this gluten free squash casserole recipe a slight kick that balances nicely with the squash, cheese, and tomatoes.

- Transfer to a casserole dish and sprinkle with shredded cheese.
- Bake for 15-20 minutes until cheese is melted
- Serve and enjoy
