Healthy Mexican Ground Beef Casserole Recipe
This Mexican ground beef casserole recipe is full of flavor and won’t leave you feeling guilty about indulging. Everything starts in a large skillet and then bakes to perfection in the oven for a delicious meal.

Ingredients for a Mexican Ground Beef Casserole Recipe
To make this dish you will need quite a few simple ingredients. Don’t let the amount of veggies scare you, it’s worth it! You can get all of these items at your local grocery store and/or online. When it comes to vegetables, I always opt for organic when possible. I feel quality fruits, vegetables, and meats are important to our health.
- 1 – 1 1/2 lbs grass-fed ground beef
- 1/2 chopped onion
- 1 medium green bell pepper, diced
- 1 1/2 Tbsp taco seasoning
- 2 cloves garlic, minced
- 1 can of fire-roasted tomatoes (14.5 oz can)
- 1 can black beans (15 oz can), drained, and rinsed
- 1 small can green chiles (4 oz)
- 1 can tomato paste (6 oz)
- 1/2 cup beef bone broth (or chicken broth)
- 1/2 cup frozen corn
- 1 medium zucchini, chopped
- 2 sweet potatoes, cubed
- 1 1/2 cup shredded dairy-free cheese
- optional for sides – avocado, dairy-free sour cream, pico de Gallo, cassava tortilla chips

You can find fresh produce at the grocery store, and for the ground beef, we get half of a steer from a local farm. You don’t need to get a cow to get quality meat. Grass-fed and finished beef and other meats are available online here: Crowd Cow.
The fire-roasted diced tomatoes add a nice flavor that you should not skip. These are the tomatoes that I like: fire-roasted tomatoes.
Beef broth or chicken broth will work for this recipe. You can make your own: homemade chicken broth, or use store-bought, this is the brand that I like: bone broth.
You can make your own homemade taco seasoning, or use premade. Keep in mind that many brands add too much sodium and unwanted ingredients. This is the one that I like because it keeps the ingredients simple and to a minimum: taco seasoning.

How to Make a Healthy Cheesy Mexican Casserole
First, preheat the oven to 375 degrees F.
Then place the cubed sweet potatoes along the bottom of the baking dish and bake for 20 minutes while you prepare the rest of the ingredients.
Next, in a large skillet, heat a drizzle of olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and crumbly. Drain any excess grease if needed, then add the diced onion.
Add the green bell peppers.
Cook for 3-5 minutes until the onions are translucent and the peppers are a little tender.
Then add the minced garlic, taco seasoning, and zucchini to the skillet.
Stir to combine and cook for another 3 minutes.
Next, add the tomatoes, black beans, frozen corn, green chiles, tomato paste, and bone broth.
Stir all of the ingredients together in the skillet to combine, and cook for another 2-3 minutes.
Then sprinkle half of the shredded cheese into the skilet, and stir.
At this point, the sweet potatoes should be ready.
Carefully scoop or spoon the ground beef mixture into the casserole dish on top of the sweet potatoes.
Sprinkle the rest of the cheese on top of the casserole, cover with aluminum foil, and return to the preheated oven to bake for 20 minutes.
Easy Mexican Ground Beef Casserole
Remove the foil for the last 3-4 minutes in the oven so the cheese can melt, and let the casserole cool for a few minutes before serving. It is very hot!
Serve with your favorite taco toppings, like sour cream, avocado, cassava, or corn chips.

Instructions
- Preheat the oven to 375.
- Place sweet potatoes in a casserole dish and roast for 20 minutes.
- Cook the ground beef in a large skillet, then drain excess liquid
- Add the onion and bell peppers to the skillet with the ground beef. Cook until onions are translucent
- Then add the garlic, taco seasoning, and zucchini to the skillet. Cook for another 2-3 minutes.
- Next, add the tomatoes, beans, green chiles, tomato paste, bone broth, and corn to the skillet. Stir to combine and for a few more minutes to incorporate.
- Then mix half of the cheese into the mixture
- When the sweet potatoes are done, remove them from the oven and scoop the beef and bean mixture into the dish on top of the sweet potatoes.
- Sprinkle the rest of the cheese on top of the casserole.
- Cover with foil and return to the oven for 20 minutes.
- Remove the foil for the last few minutes.
- Serve with avocado, sour cream, pico, and chips. etc.
