But every once in a while I need something easy and quick. This crustless quiche recipe hits the spot. Egg recipes are great for meal prep, so this crustless quiche can be made in advance and enjoyed later too.

Easy Crustless Quiche Recipe 

To make this crustless egg bake you will need a lot of eggs, and some fresh vegetables:

  • 1 lb ground beef (or ground turkey, pork or chicken)
  • 1/2 yellow onion, diced,
  • 1 bell pepper, diced (red, green, orange or yellow)
  • 1/2 mushrooms, sliced
  • large handful of fresh kale, chopped
  • 10 eggs
  • pinch of sea salt & pepper to taste
  • avocado slices, optional

How to Make a Healthy Crustless Quiche  

As always, let’s start by gathering our ingredients. When choosing your meat, look for words like grass-fed and organic. As far as your veggies are concerned, I always aim for organic, and eggs are always organic and pasture-raised.

First, preheat the oven to 375 degrees.

Start by browning your meat in a large skillet with the onions. Once the meat is cooked through and the onions are translucent, toss in the peppers, mushrooms, and kale.

Once the kale has wilted a bit transfer the meat and vegetable mixture to a baking dish. I am using a 9.5″ baking dish, you can find it online here: quiche dish.

Next, in a medium bowl combine and scramble the 10 eggs. Pour the eggs over the meat and vegetables.

Make sure the eggs cover all of the meat and veggies.

Bake your healthy crustless quiche for 40 minutes until the eggs are cooked through.

Serve with avocado slices. This easy crustless quiche makes a great weeknight dinner and can easily be enjoyed for breakfast as well.  

Recipe Tips

  • You can easily meal prep this crustless quiche in advance. Simply cook the quiche as directed, then let it cool completely. Store the quiche in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
  • Feel free to get creative with the vegetables in this recipe. Other great options include broccoli, spinach, or zucchini.
  • If you don’t have a baking dish, you can also use a pie dish or even a cast-iron skillet.

Here are some additional tips that you may find helpful:

  • For a vegetarian quiche: Omit the ground beef and replace it with an additional cup of chopped vegetables.
  • For a dairy-free quiche with cheese: Use a dairy-free cheese substitute, like this one: cheese.
