Easy Crustless Quiche Recipe

Ingredients:
- 1 lb ground beef (or ground turkey, pork or chicken)
- 1/2 yellow onion, diced,
- 1 bell pepper, diced (red, green, orange or yellow)
- 1/2 mushrooms, sliced
- large handful of fresh kale, chopped
- 10 eggs
- pinch of sea salt & pepper to taste
- avocado slices, optional
Getting Personal
Along with eating clean and trying to keep my family eating healthy I also see a nutritionist. To make a long story short he runs a full blood panel and can see where my body is lacking things or has an abundance etc. Then we take this info and use food as a sort of medicine to address any issues. For example, my thyroid was a mess, my glutamine has always been low, and my hormones are not where I’d like them to be. To keep it simple, my current diet now includes more cashews and less almonds (but not no almonds). More pork, and less chicken. No wheat, gluten, dairy, soy or refined sugars. By doing this, I am able to keep myself off of medications and fuel my body properly with a healthy diet and lifestyle.

How to Make a Healthy Crustless Quiche
Ingredients:
As always, let’s start by gathering our ingredients. When choosing your meat, look for words like grass fed, and organic. As far as your veggies are concerned I always aim for organic, and eggs are always organic and pasture raised.
- First, preheat the oven to 375 degrees.
- Start off by browning your meat in a large skillet with the onions. Once the meat is cooked through and the onions are translucent toss in the peppers, mushroom and kale. Once the kale has wilted a bit transfer the meat and vegetable mixture to a baking dish. I am using a 9.5″ baking dish, you can find it online here: quiche dish.
- In a medium bowl combine the 10 eggs and scramble them. Pour the eggs over the meat and vegetables.
- Make sure the eggs cover all of the meat and vegetables.
- Bake your healthy crustless quiche for 40 minutes until the eggs are cooked through.
Serve with avocado slices. This easy crustless quiche makes a great weeknight dinner and can easily be enjoyed as delicious crustless breakfast quiche as well.

Instructions
- Preheat oven to 375
- Chop and dice vegetables
- Brown groud beef with onions
- Add bell peppers, mushrroms and kale
- Transfer meat and vegetables to baking dish
- In a medium bowl scramble the eggs
- Top the meat mixture with the eggs
- Bake for 40 minutes until eggs are cooked through
