What’s the Difference Between Almond Flour and Almond Meal

Almond flour and almond meal are both derived from ground whole almonds, but there are some key differences:

  • Skin: Almond flour is made from blanched almonds, which have had the skins removed. This results in a finer texture and a lighter color (almost white) for the flour. Almond meal, on the other hand, is typically made from unpeeled almonds, leaving the skins on. This gives it a coarser texture and a flecked brown color.
  • Flavor: Due to the presence of the skin, almond meal can have a slightly nuttier and even a touch bitterer flavor compared to the milder taste of almond flour.
  • Nutrition: Because it contains almond skin, almond meal has a slightly higher content of fiber, minerals, and some antioxidants.

How to Make Healthy Blueberry Muffins

First, preheat the oven to 350 degrees F.

Then add the almond flour and baking soda to a large bowl. Whisk to combine and set aside.

Next, add the eggs to a separate bowl. Whisk the eggs.

Line a muffin pan with muffin liners. Parchment paper liners are my all-time favorite.

To ensure they’re perfectly done, insert a toothpick in the center. If it comes out clean, they’re ready. Transfer them to a wire rack to cool completely before eating.
