Gluten-Free Healthy Blueberry Muffin Recipe Ingredients
To make this gluten-free blueberry muffin recipe you will need a few simple ingredients. If you do a lot of gluten-free baking you most likely will have most of these items already. Otherwise, you can get them all at your local grocery store or online:
- 1 1/2 cups fresh blueberries
- 2 1/2 cups almond flour
- 3/4 cup tapioca flour
- 1/3 cup coconut flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla bean powder
- 3 large eggs, room temperature
- 1/2 cup lemon juice
- zest from 2 lemons
- 2/3 cup maple syrup
- 1/4 cup coconut oil, melted
When making these easy healthy blueberry muffins I always use fresh blueberries. I have not tried with frozen blueberries, so I am not sure how they would work.

Baking Needs to Make the Best Healthy Blueberry Muffins
You will also need a few basic baking tools and necessities. When making delicious healthy lemon blueberry muffins you will need: muffin pan, muffin liners, and a handheld mixer, or stand mixer.

How to Make Easy Healthy Blueberry Muffins with Lemon Zest
First, preheat the oven to 350 degrees F.
Start with the dry ingredients, and place the almond flour in a large bowl.
Then add the tapioca flour to the bowl.
Next, add the coconut flour to the bowl.
Lastly, add the remaining dry ingredients: baking soda, salt, and vanilla bean powder. If you don’t have vanilla bean powder, add 2 tsp vanilla extract.
Whisk the gluten-free flour blend together and set aside.
Next, move on to the wet ingredients of this healthy blueberry muffin recipe, and add the eggs to a separate medium bowl.
Then add the lemon juice. Always opt for freshly squeezed lemon juice. Its so much better than the bottle stuff.
Add the maple syrup.
Then add the coconut oil to the bowl.
Next, add the lemon zest. The lemon zest add a nice balance to this blueberry muffin recipe.
Whisk the wet ingredients to thoroughly combine.
Pour the wet ingredients into the dry, and use an electric stand mixer or hand mixer to mix the muffin batter until smooth.
Then gently fold the blueberries into the gluten-free blueberry muffin batter.
Baking Lemon Blueberry Muffins
Line a muffin tin with muffin liners. These parchment paper liners are our absolute favorite.
Spoon or scoop the muffin batter into the muffin pan. Use a 1/4 measuring cup to scoop the perfect amount and ensure that your healthy blueberry muffins are all the same size.
When the oven temperature is 350 degrees place the muffins into the oven and bake for 17-18 minutes.
Remove the muffins when the top of the muffins are golden brown and pass the toothpick test.
How to Do a Toothpick Test in Baking
A quick and easy method to determine if your sweet muffins are done is with the toothpick test. If this is your first time doing this, all you need is a simple toothpick.
Place the toothpick into the center of one of the muffins.
Then remove the toothpick. If the toothpick comes out clean then your muffins are done. But if it comes out still wet with batter then it needs more time in the oven.
Keep in mind that if your muffins have blueberries or chocolate chips the toothpick may come out wet from the blueberries or chocolate. This is ok. As long as the batter is cooked then your muffins are done baking.
Remove the muffins from the tin and place on a cooling rack.

This healthy blueberry muffin recipe with lemon makes 17 perfectly sized muffins. I wish it were an even number, but I don’t want to lie to you.
For best results make sure to use fresh blueberries and not frozen berries in this recipe. The fresh blueberries add just the right amount of moisture to make perfect fluffy muffins.
Enjoy these deliciously moist muffins warm, or save them for later in an airtight container.
You can also make a double batch and freeze some. They can easily be reheated in the microwave.
