Homemade Lentil Soup with Ground Pork Recipe

Ingredients:
- 1 lb ground pork
- 1 medium parsnip (peeled & sliced)
- 1/2 onion (sliced)
- 1 carrot (peeled & sliced)
- 2 celery stalks (sliced)
- 1/2 cup red lentils
- 1/2 cup green lemtils
- 2 cups bone broth
- 1/2 tsp garlic powder
- 2 tsp herb de Provence
- 1 bay leaf
- 1 cup water
- salt & pepper to taste
Getting Personal
Along with eating clean and trying to keep my family eating healthy I also see a nutritionist. To make a long story short he runs a full blood panel and can see where my body is lacking things or has an abundance etc. Then we take this info and use food as a sort of medicine to address any issues. More pork, and less chicken.

How to Make Easy Lentil Soup with Pork
Ingredients:
Let’s gather our ingredients. To be honest, I hadn’t realized that organic pork was even a real thing. But apparently it is! I love DuBreton brand organic pork. It can often be found at Wegmans or online here: DuBreton. When I can’t get it there I have also found a website (CrowdCow) that offers farm raised meat and so far I’m loving that too.
Prep
To prep your vegetables for your lentil soup, use a vegetable peeler and peel the skin from the parsnip and carrot. Then cut/ chop them into bit size chunks.
Cooking
To make this easy lentil soup recipe I am using my dutch oven on the stove. This is the dutch oven that I have, it’s a Lodge cast iron dutch oven and great for making soups of all kind. Let’s start by browning our pork on medium heat. Salt and pepper to taste and use a wooden spoon to break up the pork as it cooks.
Once the pork is just about cooked to where there is little to no more pink, go ahead and add the onions and garlic.
Add the carrots to your lentil soup pot next.
Go ahead and add the parsnips and celery.
Give your pork sausage lentil soup a stir.
Lentils
Next, add the red lentils to your soup recipe.
Followed by the green lentils. Of course, you can make just red lentil soup or just green lentil soup but I prefer to mix them both together.
Now we need to add liquid to our easy lentil soup recipe. Add 2 cups of broth. My preference is beef bone broth, but you can use vegetable or chicken if that’s all you have on hand. Also, add one cup of water to your soup pot.
Add a bay leaf, Herb de Provence, and garlic powder. Give your lentil soup a stir and cover. Reduce the heat and let the soup simmer for about an hour. Check and stir occasionally.

After an hour your soup will have thickened a bit and is ready to eat. Serve and enjoy.

Instructions

- Reduce heat and cover. Allow to simmer for an hour.
- Serve and enjoy
