Homemade Lentil Soup with Ground Pork Recipe

To make this tasty pork lentil soup you will need a few simple ingredients that you can easily get at the local grocery store, along with a large pot. I am using a Dutch oven, you can use a large stock pot or soup pot. 

Ingredients:

  • 1 lb ground pork
  • 1 medium parsnip (peeled & sliced)
  • 1/2 onion (sliced)
  • 1 carrot (peeled & sliced)
  • 2 celery stalks (sliced) 
  • 1/2 cup red lentils
  • 1/2 cup green lemtils
  • 2 cups bone broth, (beef or chicken broth)
  • 1/2 tsp garlic powder
  • 2 tsp herb de Provence
  • 1 bay leaf  
  • 1 cup water
  • salt & pepper to taste

Let’s gather our ingredients. To be honest, I hadn’t realized that organic pork was even a real thing. But apparently it is! I love DuBreton brand organic pork. It can often be found at Wegmans or online here: DuBreton. When I can’t get it there I have also found a website that offers farm raised meat and so far I’m loving that too.

Prep

To prep your vegetables for your hearty lentil soup, use a vegetable peeler and peel the skin from the parsnip and carrot. Then cut/ chop them into bite-size chunks. 

Cooking

To make this easy pork and lentil soup recipe I am using my Dutch oven on the stove. This is the Dutch oven that I have, it’s a Lodge cast iron Dutch oven and great for making all of your favorite soups. Let’s start by browning our pork on medium heat. Salt and black pepper to taste and use a wooden spoon to break up the pork as it cooks.

Once the pork is just about cooked to where there is little to no more pink, go ahead and add the onions and garlic.

Next, add the carrots to your pork lentil soup pot.

Then add the parsnips and celery.

Stir the ground pork soup to combine.

Lentils

Naturally, to make lentil soup with pork, you need lentils. I am using red and green lentils for this pork and lentil soup recipe. Make sure to use the type of lentil that is dry and not yet cooked. The lentils will be cooked in the beef/chicken stock during the slow cooking time.

Add the red lentils to your soup recipe.

Followed by the green lentils. Of course, you can make just red lentil soup or just green lentil soup but I prefer to mix them both together.

Next, we need to add liquid to our easy lentil soup recipe. Add 2 cups of broth. My preference is beef bone broth, but you can use chicken or vegetable stock if that’s all you have on hand. The broth gives an added depth of flavor to the soup. Also, add a bit of water to the pot, about one cup of water is all you need.

Add a bay leaf, Herb de Provence, and garlic powder. Give your lentil soup a stir and cover. Reduce the heat and let the soup simmer for about an hour. Check and stir occasionally.

Healthy Easy Lentil Soup Recipe with Ground Pork

After an hour your soup will have thickened a bit and is ready to eat.  It will have thicked to almost a lentil stew. This is part of what makes this pork and lentil soup so comforting. Serve in your favorite soup bowls and enjoy.

Instructions

  1. Brown the ground pork in a dutch oven over medium heat.
  2. Salt & pepper to taste
  3. Add onions and garlic.
  4. Add carrots, parsnips and celery
  5. Stir to combine.
  6. Next, add lentils, bone broth and water
  7. Season with garlic powder, herb de provence and bay leaf
  8. Reduce heat and cover. Allow to simmer for an hour.
  9. Serve and enjoy
