Healthy Classic Waldorf Salad Recipe
Ingredients
The first thing we do is gather our ingredients. When shopping for the produce for your Waldorf salad try to stick with organic as often as possible. No one wants pesticides in their salads.
Did you know that the common mayonnaise brands are made from soy? Whether or not to consume soy is a personal choice, but keep in mind that the majority of soy grown in this country is genetically modified and covered in pesticides. This can mess with your thyroid, hormones and metabolism. Because of this I opt for an avocado oil based mayonnaise like this one. You can find it at your local grocery store or online here: Avocado Mayo.
How to Make Simple Waldorf Salad
- Chop the apples into bite-size pieces. You can leave the skin on because its packed with fiber.
- Roughly chop the walnuts.
- Next, chop the celery.
- Add all of the ingredients, except the lettuce leaves into a medium size salad bowl.
- Next add the mayonnaise and toss along with the salt and lemon juice. This easy Waldorf salad recipe calls for 1/2 cup of mayonnaise. You may want to start with 1/4 of a cup and add more as desired. Some prefer more while others prefer less mayo.
- Serve the Waldorf salad by placing a few lettuce leaves on the bottom of individual bowls and then divide the salad into two bowls.
- Enjoy while fresh. If you have any leftovers you can store them in an airtight container for up to three days. Lettuce may wilt quicker when mixed with the mayonnaise. Therefore, it’s usually best to keep the lettuce separate until time to eat.
- This healthy Waldorf salad recipe makes a great lunch or side for a get together.
Swaps and Alternatives:
No recipe is set in stone. The more comfortable you are in the kitchen the more comfortable you will be swapping out ingredients to your liking and playing around with recipes. I often look at a recipe as a guide and make tweaks and adjustments all the time. Here are a few swaps and alternatives you can use if you’d like:
- feel free to use another type of apple if Granny Smiths aren’t your favorite.
- you can also swap out the white grapes and use another, like puree grapes for a pop of color.
- not a fan of walnuts? try pecans instead
- if you prefer to avoid mayonnaise completely and would like a Waldorf salad without mayo then believe it or not you can make Waldorf salad with yogurt. My ‘go-to’ is a cashew based plain yogurt by Foragers. But you can probably use any plain or Greek yogurt of your choice.
