Eating healthy real food and clean eating doesn’t have to be hard or time-consuming. You can easily bake a batch of these easy banana muffins and store them in the freezer to grab whenever you want. They heat up quickly and pair perfectly with evening tea or as an afternoon snack.

What You Need to Make This Healthy Banana Muffins Recipe

To make these healthy gluten free banana muffins you will need a few simple ingredients. This tasty snack is made with clean ingredients, which means no refined sugars, or overly processed ingredients.

Most of these ingredients are staples in gluten-free baking.

  • 2 cups of very ripe bananas, mashed (app 4-5 bananas)
  • 1/2 cup unsweetened applesauce
  • 2 eggs, room temperature
  • 1/3 cup raw honey
  • 2 Tbsp coconut oil, melted
  • 2 tsp pure vanilla extract
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 2 cups gluten free baking flour
  • 1 tsp salt

In addition to these basic ingredients, you will also need common baking tools like a measuring cup, cooling rack, large mixing bowl, and a muffin pan, and muffin liners.

When choosing the bananas, it’s best to use very ripe bananas. When the get brown spots and no one in the house is willing to eat them – that’s when bananas are the most sweet and perfect to baking. They’ve reached the point of bake with them, or throw them in the trash/composter. My kids refuse to eat bananas when they reach this stage.

For the applesauce, look for one that doesn’t have anything added. Especially no added sugar. The only ingredient should be apples.

My preference for honey is always raw and unfiltered. You can find it at your local grocery store, or online here: raw honey.

When it comes to baking, I tend to use a lot of almond flour, and coconut flour. Bobs Red Mill has a variety of great gluten free flours and other products. For this recipe we are using 1:1 gluten free baking flour, and it can be found online here: gluten free flour.

First, preheat the oven to 350 degrees F.

Then in a large bowl, mash the bananas with the back of a fork or a potato masher until smooth. Next, add the applesauce, eggs, and raw honey.

Mix well either by and or with an electric hand mixer.

Next, in a small bowl whisk together the coconut oil and vanilla extract. Then add the oil mix to the banana mixture.

Mix well until thoroughly combined.

In a separate bowl combine the dry ingredients and whisk together.

Then add the dry ingredients to the wet ingredients. Mix until fully incorporated and there are no patches of dry flour.

How to Bake Healthy Banana Muffins

Line a muffin pan with paper liners, and portion the gluten free banana muffin batter into the prepared pan. Fill the muffin cups using a 1/4 cup measuring cup to ensure equal portions.

Bake the muffins for 18-22 minutes until slightly golden brown. You can test the ‘doneness’ of your muffin with the toothpick test. Insert a toothpick into the center of a muffin. If it comes out clean they are done. But if it comes out wet with batter then let the muffins bake for a few more minutes.

Ingredients

  • 2 cups ripe bananas, appx 4-5 bananas
  • 1/2 cup applesauce
  • 2 eggs
  • 1/3 cup honey

  • 2 cups Gluten free flour

Instructions

  1. Preheat oven to 350F.
  2. Gather banana muffin recipe ingredients. Make sure your bananas are ripe.
  3. Line with cupcakes liners or grease a 12-count muffin tin and set aside.
  4. In a large bowl, combine the bananas, applesauce, eggs, and honey either by hand or with an electric mixer.
  5. Combine the coconut oil and vanilla extract. Mix into the banana mixture.
  6. Next combine the flour, baking powder, baking soda, and sea salt.
  7. Add the flour mixture to the banana mixture and mix until combined. 
  8. Portion batter into the prepared muffin pan, about 2/3 of the way full.
  9. Bake for 18-22 minutes, until they pass the toothpick test.
