  • 1/2 cup shredded unsweetened coconut (plus more for rolling)

  • 1/4 almond milk
  • 2 Tbsp coconut oil, softened
  • 2 Tbsp raw honey

How to Make Strawberry Coconut Balls

First, combine the coconut flour and almond flour in a large mixing bowl.

Then add the ground flax seed and shredded coconut. Flaxseed is a great source of plant-based protein.

Next, add the freeze-dried strawberry powder. This will add the subtle sweetness of strawberries as well as a pretty pink hue to the energy balls.

Once chilled, remove the mixture from the fridge and use a small scoop (like this one: scooper) to portion even amounts onto a sheet of wax or parchment paper.
