Sweet Potato Breakfast Hash Recipe

Ingredients:
- 4 cups shredded sweet potato (appx 2 medium/large sweet potatoes)
- 2 Tbsp olive oil
- 1 medium onion, chopped
- 1 clove of garlic, minced
- 6oz mushrooms
- salt & pepper to taste
Homemade breakfast is probably my favorite meal of the day. Honestly, I turn down eating out or going to the diner because I prefer to eat at home and make my own healthy breakfast. Sweet potato hash browns are one of my favorites, it’s right up there with an egg scramble and lots of veggies.

How to Make Healthy Homemade Sweet Potato Hash
Prep:
- As always, let’s make sure that we have all of our ingredients to make our clean eating sweet potato hash. You will also need a box grater, like this one HERE to make shredded sweet potato hash. If you don’t have one you can chop your sweet potatoes into small pieces.
- First, peel the skin off of your sweet potatoes and shred them with your grater.
- Shred 4 cups of sweet potatoes for your hash.
- Next, chop up your onion.
- Smash and mince the garlic.
- Chop the mushrooms in half and then in thirds.
Cooking:
- Heat the oil in a large pan or skillet over medium heat.
- Add the onions and garlic and cook until they become translucent. This should only take about 5 minutes.
- Next, add the shredded sweet potatoes to the skillet.
- Continue to cook over medium heat for about 15 minutes. Stir occasionally. Your sweet potatoes will soften and seem to ‘shrink’ just a bit.
- Lastly, season with salt and pepper and add the mushrooms to the skillet.
- Cook for a few more minutes until the mushrooms are soft and the sweet potatoes begin to get just a little crisp.

Ingredients
- 4 cups shredded sweet potato (appx 2 medium/large sweet potatoes)
- 2 Tbsp olive oil
- 1 medium onion, chopped

Instructions
Shred sweet potatoes.
Finely chop onions and garlic.
Chop mushrooms in half, then in thirds.
Heat oil in a large pan over medium heat.
Add onions and garlic and cook until they become translucent for about 5 minutes.
Next, add shredded sweet potatoes.
Cook over medium heat for about 15 minutes, stirring occasionally.
Season with salt and pepper.
Add mushrooms and cook until soft, about 5 more minutes.
