To make this simple sweet potato hash breakfast recipe you will need just a few ingredients that you can easily get at the local grocery store. 

Ingredients:

  • 4 cups shredded sweet potato (appx 2 medium/large sweet potatoes)  
  • 2 Tbsp avocado oil, or extra-virgin olive oil  
  • 1 medium yellow onion, chopped 
  • 1 clove of garlic, minced, (or 1/4 tsp garlic powder)
  • 6oz mushrooms 
  • salt & pepper to taste

Homemade breakfast is probably my favorite meal of the day. Honestly, I turn down eating out or going to the diner because I prefer to eat at home and make my own healthy breakfast. Sweet potato hash browns are one of my favorites, it’s right up there with an egg scramble and lots of veggies. Plus eating at home and making your own healthy recipes is a great way to stay on track and avoid those enormous portion big breakfasts that you get when you eat out.

How to Make Healthy Homemade Sweet Potato Hash

  1. As always, let’s make sure that we have all of our ingredients to make ourย crispy sweet potato hash. You will also need a box grater, like this oneย HEREย to makeย shredded sweet potato hash. If you don’t have one you can chop your sweet potatoes into small pieces.ย 
  2. First, peel off the sweet potato skins with a standard vegetable peeler. Then shred the sweet potatoes with the box grater. grated sweet potatoes

  5. Smash and mince the garlic. garlic clove

Cooking: 

  1. Heat the oil in a large skillet over medium heat. 
  2. Add the onions and garlic to the skillet and cook until they become translucent. This should only take about 5 minutes. onions in skillet

  4. Continue to cook over medium heat for about 15 minutes. Stir occasionally. Your sweet potatoes will soften and seem to ‘shrink’ just a bit. make sweet potato hash recipe

Serve the crispy sweet potatoes with mushrooms and onions immediately. A fried egg on top of the hash is a great way to blend all of the flavors.
