This easy poached eggs recipe is served on mashed avocado toast with sliced cherry tomatoes. If you can make a poached egg then you can make this easy poached egg recipe. Egg recipes are so easy to make, and good for you too! This is one of my favorite egg poacher recipes.

Combine your love of poached eggs with easy avocado toast and sliced tomatoes. Garnish with some fresh micro greens and you have an entire meal full of flavor and healthy fats.

You do not need a fancy avocado toast recipe or even anything fancy at all to make this delicious breakfast recipe. That is part of the beauty of making poached eggs. Poached egg recipes are easy, healthy, and flexible. 

What You Need for This Poached Eggs Recipe

To make this easy poached eggs and avocado recipe you only need a few simple ingredients. 

  • 2 slices of toast
  • 2 eggs
  • 1 avocado mashed
  • 1/4 cup sliced cherry tomatoes
  • ​optional microgreens for garnish

When poaching eggs you always want to make sure to use fresh eggs. We use organic, pasture-raised eggs like the ones found here: eggs.

For the toast, since I tend to avoid gluten, I am using grain-free bread from Base Culture. You can find it online here: base culture. If you are not gluten-free, you can use any bread that you’d like.

How to Poach Eggs

It’s no secret that there are many different ways of poaching eggs. For this poached eggs recipe, I am using an egg poacher. It makes the best-poached eggs in just three minutes. You can find this particular egg poacher online here: egg poacher.

I’ll keep it simple because you can find the detailed instructions for how to use an egg poacher here: How to poach an egg in a poacher.

Simply, fill a pot with enough water to cover the holes in the egg poachers. Heat the water on medium-high heat until it starts to simmer.

I like to add a splash of white vinegar to the water. The vinegar will help to solidify the egg whites during the egg poaching process.

When the water begins to simmer/low boil crack the eggs into the open holes. Lower the heat to maintain a gentle simmer.

This egg poacher simulates the same cooking process as the traditional poached egg water bath. The main difference is that the poacher keeps the egg contained in one place.

Once the eggs enter the water you start a timer. The cooking time for the perfect egg depends on how you like your eggs. For me, three minutes in the simmering water gives me cooked egg whites, with creamy, slightly runny egg yolks. 

When the time is up, remove the egg poachers from the water. Then use a slotted spoon, like this one: spoon, to gently remove the poached eggs from the hot water.

Transfer the poached egg to a paper towel to remove any excess water being plated.

How to Assemble Poached Eggs Recipe on Avocado Toast

​While the eggs are cooking in the water, make sure to toast the bread, and mash a ripe avocado in a small bowl.

Spread the mashed avocado mixture onto each slice of toast.

Next, carefully place the poached eggs onto each piece of toast with the avocado mash.

Then add a few sliced cherry tomatoes, micro-greens, or other fresh herbs, and salt and black pepper to the poached eggs.

If you prefer your egg yolks more on the runny side then the cooking time should be reduced to between 2-3 minutes. If you like your eggs cooked all the way through to resemble hard-boiled eggs then increase the cooking time to close to 4 minutes.

Instructions

  1. First, heat water over medium high heat with enough water to cover egg poacher holes. Add a splach of white vinegar to the water
  2. When water begins to simmer, lower the heat to maintain a gentle simmer.
  3. Crack an egg into each egg poacher and start a timer
  4. Three minutes will cook the eggs with cooked egg whites and creamy runny yolks. Adjust the time to your own preference.
  5. While the eggs are cooking toast the bread slices.
  6. Mash fresh avocado in a small bowl.
  7. Spread avocado mash onto each piece of toasted bread.
  8. When eggs are done, remove them from the water using a slotted spoon.
  9. Place eggs on a paper towel to drain excess water
  10. Carefully place poached eggs onto the avocado toast.
  11. Add sliced cherry tomatoes, salt, pepper and microgreens or fresh herbs.
  12. Serve and enjoy
