When it comes to getting your daily dose of veggies, have you ever considered roasted leeks? This roasted leeks recipe is simple, healthy and delicious, which makes it a no-brainer. I’ve talked a bit about how I changed my entire lifestyle when it comes to food and started clean eating. I have always been a vegetable lover. But I was never quite sure how to use leeks or how to cook leeks. Who knew, it is easier than you’d think to prepare and cook a leek.
Healthy Roasted Leeks Recipe (Vegan, Paleo, Gluten Free)

- 6 Leeks
- 3 Tbsp Olive Oil
- 1 Lemon
- 1 1/2 tsp fresh chopped thyme
- salt & pepper to taste
- Baking Dish
How to Make Simply Roasted Leeks
In case you are unsure roasted leeks and baked leeks are the same thing. So let’s start cooking leeks for a tasty leek side dish to your next meal.

Instructions:
- Preheat the oven to 450 degrees and gather your leeks and other ingredients.
- Cut the white stems off of the leeks. Then remove any green outer leaves. You really only want mostly the white part of the stem. So, when choosing your leeks for this leeks recipe, make sure to choose leeks that have the long white stems instead of the larger green leaves.
- Slice each leek in half lengthwise, and rinse the leek thoroughly with water to get rid of any dirt held between its leaves.
- Place the leeks cut side up in a 13×9 baking dish.
- With a basting brush, brush the leeks with 3 tablespoons of olive oil.
- Sprinkle the leeks with salt and pepper to taste. I prefer minimal salt and pepper when roasting leeks, where my husband prefers more. We meet in the middle.
- Squeeze the juice from half of a lemon over top of the leeks.
- Sprinkle 2 teaspoons of chopped fresh thyme over the leeks.
- Bake your leeks for 20-25 minutes.
- Serve hot with fresh lemon wedges and sprigs of thyme for garnish
