  • 2/3 cup applesauce
  • 2 eggs, room temperature
  • 1/4 cup raw honey
  • 1 Tbsp coconut oil, melted

  • 1/2 cup chopped pecans

These healthy cinnamon muffins are made with nutty gluten-free flour instead of all-purpose flour. The only other flour I would consider swapping in for almond would be cashew flour to keep the same texture and flavor profile. 

You can use storebought or homemade applesauce. During apple season, opt for homemade, and try my easy applesauce recipe for fresh apple flavor. 

I am using chopped pecans for an added nutty crunch, you are free to use walnuts as an alternative. 

How to Make Healthy Cinnamon Muffins

First, preheat the oven to 350 degrees F. 

​Next, start with the wet ingredients, and combine the applesauce and eggs in a large bowl. Then add the honey. For a touch of natural sweetness, we use honey instead of brown sugar, offering a lower glycemic index and a subtle sweetness.

Add the melted coconut oil, apple cider vinegar, and vanilla extract to the bowl.

Stir to combine and set aside.

Next, add the almond flour to a separate medium bowl.

Add the baking soda, baking powder, salt, and cinnamon to the bowl.

Use a wire whisk, and whisk to combine.

Stir to mix, then gently fold the chopped pecans into the muffin batter.

Cinnamon Muffin Recipe – Time to Bake

First, line a muffin tin with paper liners. Parchment paper muffin liners ensure these muffins release perfectly every time, leaving you with clean and beautiful results.

For perfectly portioned muffins, use a ¼ cup measuring cup to evenly distribute the batter among the muffin cups. This ensures consistent baking and even muffin tops.

Place the muffin pan in the preheated oven and bake for 17-19 minutes. The muffins are ready when they are golden brown and pass the toothpick test. For perfectly baked muffins, the toothpick test is key. Poke a toothpick into the center of a muffin, it should come out clean, indicating the muffins are cooked through.

Transfer the fluffy cinnamon muffins to a wire rack to cool. Dust the tops of the muffins with powdered white sugar, or cinnamon sugar. This is optional but adds a nice color contrast to the muffins.

  7. Bake for 17-19 minutes until brown and they pass the toothpick test.
  8. Remove, transfer to a wire rack to cool
  9. Optional - dust the tops with powdered sugar or cinnamon sugar
