What You Need to Make Banana Oatmeal Cinnamon Muffins

  • 1 cup gluten free rolled oats
  • 1 3/4 cup gluten free baking flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Tbsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 1/2 cup mashed banana, 1 large or 2 small ripe bananas
  • 1 cup almond milk
  • 1/2 cup avocado oil
  • 1/2 cup maple syrup
  • 1/4 cup chopped walnuts

Oats are a popular choice in gluten-free baking, especially when making delicious banana oatmeal muffins. But there are many different kinds. I always opt for gluten-free ‘rolled’ or old-fashioned oats, over other kinds like quick-cooking oats. Bobs Red Mill carries many kinds of gluten-free flour and products. You also need a muffin pan and muffin liners to make this healthy cinnamon oatmeal banana muffin recipe. I love these parchment paper liners.

How to Make Healthy Cinnamon Banana Oat Muffins

Then in a large bowl, combine the oats and the almond milk. Let the oats soak for 20 minutes to absorb the liquid and soften. 

In a separate bowl, mash the bananas with a fork or potato masher.

Next, add the vanilla extract to the mashed banana.

Add the oil and maple syrup.

When the oats are finished soaking, add the baking powder, baking soda, salt, and cinnamon.

Then pour the wet ingredients into the oats. Stir to combine.

Next, add the gluten-free baking flour to the wet mixture.

Lastly, fold the chopped walnuts into the muffin batter.

How Long to Bake Oatmeal Cinnamon Banana Muffins

First, line a muffin tin with paper liners.

Then scoop or spoon batter into the muffin cups using a 1/4 cup measuring cup.

Bake for 14-15 minutes until slightly golden brown and they pass the toothpick test.

Remove the muffins from the oven, and transfer them to a wire rack to cool.

Leave as is, or dust the top of the muffins with a little powdered sugar

  4. Add the maple syrup, avocado oil, vanilla extract.
  5. When the oats are done soaking add the baking powder, baking soda, cinnamon and salt.
  6. Then add the wet ingredients to the dry. Stir to combine
  7. Next, add the gluten free baking flour to the muffin batter mixture
  8. Lasty fold in the chopped walnuts.
  9. Line a baking pan with muffin liners, and scoop the batter into the muffin cups.
  10. Bake for 14-15 minutes until they pass the toothpick test.
