Healthy Apple Muffins Recipe with Cinnamon

What You Need to Make Healthy Apple Muffins
To make this apple cinnamon muffin recipe you will need a few basic ingredients. These are all often used in gluten-free baking. You may already have some of these items in your pantry, otherwise, they can all be found at your local grocery store or online.
- Dry Ingredients
- 2 cups almond flour
- 1/2 tsp cinnamon
- 1/2 tsp vanilla bean powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Wet Ingredients
- 1/2 cup pure maple syrup
- 3 Tbsp avocado oil
- 3 eggs, room temperature

- 1/2 cup walnuts, chopped

For the flour, I love Bob’s Red Mill almond flour, and this maple syrup. Make sure to use pure maple syrup and not the watered-down sugary stuff.
For the apple in these delicious apple muffins, I am using Gala apples. You can use Pink Lady, Honeycrisp apples, or whatever kind of apples you prefer.
If you don’t have vanilla bean powder you can use 1 tsp pure vanilla extract in its place. You can also use coconut oil or avocado oil. I use both when baking, and just decided to go with avocado oil for this healthy apple muffins recipe.
You will also need a muffin tin and muffin liners. I love these parchment paper liners when baking healthy muffin recipes.
How to Make Healthy Cinnamon Apple Muffins
First, preheat the oven to 325 degrees F.
Then start with the almond flour in a large bowl, and add the other dry ingredients.
Next, add the chopped walnuts to the bowl.
In a separate medium bowl, combine the eggs, the maple syrup, and the rest of the wet ingredients.
Whisk to combine the wet ingredients.
Pour the wet ingredients into the dry ingredients. Stir to combine.
Fold in the diced apple. Save a little bit for the tops of the muffins.
How to Bake the Best Apple Muffins
Line a muffin pan with parchment paper liners.
Use a 1/4 cup measuring cup to spoon the muffin batter into the muffin cups. Top each muffin with a few pieces of diced apple, and bake in the preheated oven for 16-18 minutes.
These tasty fluffy muffins are done when the tops are slightly golden brown and they pass the toothpick test.
When done, remove the muffins from the oven and place them on a wire rack to cool.
Healthy Apple Muffins with Walnuts
These moist muffins combine the natural sweetness of sweet apples with a subtle crunch of walnuts and the warm spice of cinnamon.

- Remove and place on a wire rack to cool
