You can use my homemade Ninja Foodi chicken broth recipe for the broth in this recipe or store-bought.
Make sure to use a quality cut of meat no matter which cut you choose. I like ordering my pork and other meats online from Crowd Cow, where the meat comes from small regenerative farms. For this recipe, I am using a bone-in pork roast/butt cut, (because that is what I have on hand).
For the spice mixture, I am using coconut sugar instead of brown sugar because coconut sugar has a lower glycemic index, making it a better choice for keeping blood sugar steady. It is also minimally processed compared to brown sugar and other refined sugars.
Of course, to make this Ninja Foodi recipe, and any other Foodi recipes you need the Ninja Foodi. It is the most handy of all kitchen gadgets. This countertop appliance is more than just a pressure cooker, it is also an air fryer and has multiple other functions like sear/saute, and broil. With the Foodi, you can replace the instant pot, another electric pressure cooker, and your slow cooker and air fryers.
How to Make Pulled Pork in the Ninja Foodi
First, cut the pork into large chunks and place it in a large bowl.
Then in a small bowl combine the coconut sugar with the spices.
Generously rub the spice blend all over the meat, making sure to coat it completely. Set the seasoned meat aside and let it sit at room temperature for 2 hours, flipping it halfway through, to allow the spices to absorb into the pork.
How to Cook Pulled Pork in the Ninja Foodi
Once the pork is ready, it’s time to sear. Use the Ninja Foodi’s sear/sauté function to get the pot nice and hot with the lid open.
Next, add the pork chunks to the hot pot and sear them on all sides for a deep brown color. A little olive oil can help with browning, but well-marbled pork may not need it. If your pork has a lot of fat, focus on rendering some of it out before searing the meat.
Once browned on all sides, carefully transfer the meat from the pot using silicone tongs to avoid scratching. Set it aside on a plate while you deglaze the pot.
Next, pour the chicken broth into the hot pot and use a wooden spoon to deglaze. Make sure to scrape up any brown bits from the bottom of the pot.
Then add the remaining liquid (apple cider vinegar) to the pot, and place the seared pork back into the Foodi.
How Long to Cook Pork Shoulder in the Ninja Foodi
Next, secure the pressure lid onto the Foodi. Select high pressure, set the cook time for 40 minutes, and press start.
The cooking time for pork in the Foodi is more about how much pork you are cooking than the type of pork. If you are cooking 3 lbs of pork roast or 3 lbs of pork shoulder the cooking time will be comparable.
If the 3 lb pork shoulder and 3 lb pork roast are similar in thickness, they will likely cook in the same amount of time. However, if one is significantly thicker, you’ll need to adjust the cooking time accordingly. The thicker piece might need an extra 5-10 minutes.
The top of the pressure cooker lid has a valve. Make sure the valve is set to seal.
When the Ninja Foodi reaches full pressure the red button will pop up showing you that the appliance is under high pressure. Do NOT attempt to remove the lid. Let the Foodi work its magic and cook the pork.
When the cooking time is finished, it will automatically begin a natural pressure release. Allow the natural release for 15 minutes, and then switch the valve to vent for a quick release of the remaining pressure. Once the red button drops it is safe to remove the lid.
Remove the lid to reveal your juicy pork. While the safe minimum temperature for pork is 165°F, for perfectly tender shreds that practically melt in your mouth, aim for an internal temperature of at least 190°F.
Transfer the cooked pork to a platter or cutting board and shred it with a pair of forks. Save a little bit of the cooking liquid and set it aside.
