These paleo lemon blueberry scones are delicious and pair perfectly with a hot cup of tea. Since I started clean eating I’ve not only dropped over 35 lbs but I feel great and I completely believe it has to do what we put in our bodies. I never planned to start a paleo or gluten-free lifestyle, but it is something that just fell into place as I began changing my eating habits. But even though it wasn’t a planned decision, it has been a good decision none the less since I truly see results. - 3 cups Almond Flour
- 1 tps Baking Powder
- pinch of Salt
- Lemon (zest nd juice)
- 2 Tbsp Maple Syrup
- 2 Eggs
- 1 cup Blueberries
How to Make Easy Blueberry Scones with Lemon
Eating healthy real food doesn’t have to be hard or time-consuming. Ready to make your own lemon blueberry scones? These healthy lemon blueberry scones are delicious made with just a few ingredients. If you are unsure of what almond flour to use, this is the one that I use and love: HERE. The rest of the ingredients can be easily found at your local grocery store. First, preheat the oven to 325 F and line a baking sheet with parchment or silicone liner. While the oven is heating up gather your ingredients for scones and your measuring cups and spoons (HERE).
Directions:
- In a large bowl sift together the almond flour, baking soda and a pinch of salt.
- Add the lemon zest and mix well.
- Make a well in the center of the flow mix and crack 2 eggs.
- Add the maple syrup and the lemon juice and mix well until it forms a sticky dough.
- Fold in the blueberries.
- Using an ice-cream scoop, drop the batter onto the prepared baking sheet. Slightly flatten the top of the mounds to form a round shape.
- Bake for 20 minutes, or until the tops are golden.
- Cool on a wire rack and store the leftovers in an airtight container in the fridge.
- Serve with tea or coffee.
