What You Need to Make This Pork and Rice Casserole Recipe

This easy recipe is extremely versatile. It’s made with different ingredients that can be easily found at the local grocery store and can also be interchanged to suit your needs or personal taste.  

  • 1 lb ground pork
  • 1 orange bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1 cup jasmine rice, measured dry
  • 1 1/2 cup chicken broth
  • 1 -15oz can fire roasted tomatoes, do not drain
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cloves garlic, minced
  • optional fresh parsley for garnish

Bell peppers come in a variety of colors, not only adding a pop of vibrancy to the dish but also offering slightly different flavor profiles. I like to use green bell pepper for its light flavor, balanced by the sweetness of either an orange or yellow pepper.

If you don’t have jasmine rice, you can use another white rice like basmati, or brown rice if you prefer. Do not use minute rice or instant rice. The amount of liquid is relative to the amount of uncooked rice in this easy casserole recipe. 

Fire-roasted tomatoes add a touch of smoky depth and sweetness, taking this dish from ordinary to extraordinary.

For the broth, I use my homemade chicken broth recipe, but you can use storebought chicken broth or beef broth. 

Quality of meat is important, especially when it comes to pork. I order all of my meat online from small regenerative farms. You can get quality beef, chicken, and pork online from Crowd Cow and have it shipped to your home. If you are not a fan of ground pork, you can use ground chicken, or ground turkey if you’d like.

How to Make a Ground Pork and Rice Casserole with Vegetables 

First, preheat the oven to 350 degrees F.

Then cook the ground pork in a large skillet, over medium-high heat. Cook the pork until brown and crumbly, and there is no more pink.

Next, use a slotted spoon to remove the cooked pork from the skillet and set it aside. Leave the pork fat in the skillet, and add the onions.

Cook the onions for about 3-4 minutes until translucent. Then add the diced bell peppers to the skillet.

Add the salt, pepper, and dried basil. Stir to combine and cook for 1-2 minutes to incorporate.

Next, add the minced garlic, and the rice. Stir and cook for another 1-2 minutes.

Then add the chicken stock to the skillet.

Add the can of diced fire-roasted tomatoes with the liquid.

Bring to a simmer, then reduce the heat, cover, and let simmer for 10-12 minutes to allow the rice to absorb some of the liquid.

After 10-12 minutes the rice will still be al dente, this is ok.

Next, return the cooked pork to the skillet.

Stir to combine.

Transfer the ingredients to a casserole baking dish, cover with aluminum foil, and place in the preheated oven to bake for 20 minutes.

This is one of my favorite recipes because it combines all of my favorite things, and is both easy and healthy. You can serve it as a main dish, then use the leftovers for a side dish the next day. Just store leftovers in an airtight container in the refrigerator, and heat it in the microwave when ready.

  5. Then add the bell peppers, salt, pepper and basil. Cook 1-2 minutes.
  6. Add the minced garlic and uncooked rice. Cook 1-2 minutes.
  7. Next, add the chicken broth and canned tomatoes, with the liquid.
  8. Cover and let the ingredients simmer for 10-12 minutes.
  9. Remove from the heat, and return the cooked pork to the skillet. Stir to combine,
  10. Transfer to a casserole dish. Cover with foil and bake for 20 minutes until the rice is fluffy and has absorbed all of the liquid.
  11. Serve and enjoy
