What You Need to Make This Mashed Potato Casserole Recipe

To make this simple casserole dish you need a few kitchen essentials and only 5 ingredients, plus salt and pepper to taste.

  • 4 lbs of potatoes
  • 1/2 cup cashew milk
  • 2 Tbsp ghee
  • 4 slices nitrate-free bacon
  • 1/2 cup dairy-free mozzarella cheese
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper

 For the potatoes, you can use russet potatoes or Yukon gold potatoes.

How to Make Healthy Mashed Potato Casserole with Bacon

First, preheat the oven to 350 degrees F. 

Then wash, peel, and cut the potatoes into chunks.

Fill a large pot with water and boil the potatoes over medium-high heat until fork tender. This should take approximately 15-20 minutes.

While the potatoes are boiling, cut the bacon into small pieces and cook in a large skillet until all of the fat is rendered.

Transfer the crispy bacon to a paper towel to drain, and set aside.

As soon as the potatoes are fork-tender, remove them from the boiling water and pour the tender potatoes into a colander to drain.

​Next, place the cooked potatoes back into the large pot or a large mixing bowl.

Next, use a potato masher and mash the potatoes.

Then add the cashew milk to the potatoes. Cashew milk is a creamy dairy-free milk, and milder than almond milk.

Add the ghee, salt and pepper. Continue to mash potatoes until thoroughly combined.

Next, add the shredded cheese to the mashed potato mixture. Stir to incorporate.

How Long to Bake a Casserole Made with Creamy Mashed Potatoes

Transfer the cheesy potatoes to a casserole baking dish. 

Cover the dish with aluminum foil and bake for 20 minutes. 

For the last 5 minutes in the oven, remove the foil and sprinkle the top of the casserole with the cooked bacon bits.

Remove the mashed potato casserole from the oven and serve immediately.

  13. Remove the foil for the last 5 minutes and top with crispy bacon
