Ninja Air Fryer Vegetables Ingredients
To make these delicious Ninja air fryer vegetables you will need a selection of fresh vegetables, olive oil, lemon, and parsley. You can get all of these at your local grocery store.
- 1/2 cup zucchini, sliced and quartered
- 1/2 cup yellow squash, sliced and quartered
- 1/2 cup mushrooms, quartered
- 1/2 cup asparagus, cut into bite-size pieces
- 1/2 of a red bell pepper, sliced
- 2 Tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 2 tsp lemon juice, and zest of one lemon
- 2 cloves of garlic, minced
- salt and pepper to taste
You can adjust the vegetables if you’d like and easily add in green beans, red onion, and other root vegetables if you prefer. There is no right or wrong combination of vegetables. But, I would highly suggest using fresh produce, and not frozen vegetables.

How to Cook Vegetables in a Ninja Air Fryer
First, start by preheating the Ninja air fryer by pressing the power button, then air crisp, adjust the temperature to 390 degrees, and start. Allow the Ninja air fryer to warm up for at least 3 minutes while you prep the vegetables.
Next, slice and quarter the zucchini and squash, slice the red bell peppers, quarter the mushrooms, and cut the asparagus. Combine the marinade ingredients in a small bowl and whisk to combine. Add a little bit of salt and black pepper to the marinade mixture.
Then transfer the vegetables to a large mixing bowl and add the marinade.
Toss to combine and fully coat the vegetables with the mixture.
Next place the seasoned vegetables into the preheated air fryer basket.
How Long to Cook Vegetables in Ninja Foodi Air Fryer
The best way to cook vegetables in the Ninja Foodi air fryer is to set the timer for 8 minutes. At 8 minutes toss the vegetables in the basket and then cook for another 8 minutes.
You may also give it a few more tosses during the cooking process to make sure that the hot air has contact with all of the air fryer veggies.
Be careful when tossing the vegetables, when air frying, make sure to use a pair of silicone tongs to avoid scratching the air fryer basket.
If you feel your Ninja air fryer vegetables need more time you can add additional time in the fryer. The 16-minute cooking time results in perfectly firm yet tender vegetables.
