First, preheat your Ninja, or other air fryer to 375 degrees F and allow it to heat up for a few minutes. I am using the Ninja Foodi all-in-one air fryer and pressure cooker.

At 10 minutes begin checking the internal temperature of the steak using an instant-read thermometer.

When cooking filet mignon, and other steaks, the final cook time will vary depending on a few things: the thickness of your steak and how you like it cooked (rare, medium, or well done). A thick steak and those cooked to a well-done level will require a little extra time in the air fryer.

While the sight of a beautifully seared steak is tempting, achieving the perfect level of doneness is all about internal temperature. It’s the most reliable way to ensure a juicy and flavorful perfect steak, every single time. Here’s a quick guide to link doneness with internal temperature:

  • Rare (120ยฐF – 125ยฐF): A cool-to-warm red center with a very soft, tender texture.
  • Medium Rare (130ยฐF – 135ยฐF): A warm red center with a nice balance of juicy tenderness and a slightly firmer sear.
  • Medium (140ยฐF – 145ยฐF): A hot pink center with a firmer texture throughout. This is the recommended minimum safe temperature according to the USDA.
  • Medium Well (150ยฐF – 155ยฐF): Mostly brown center with a firm texture.
  • Well Done (160ยฐF+): No pink remaining, completely cooked through with a very firm texture.

Using a digital instant read thermometer is your best bet for pinpointing the perfect internal temperature for your desired doneness.
