What You Need to Make Healthy Air Fryer Mixed Vegetables
To make this healthy air fryer recipe you will need a handful of fresh vegetables, olive oil, balsamic vinegar, garlic, and salt and pepper.
- 1/2 cup yellow squash, sliced and quartered
- 1/2 cup zucchini, sliced and quartered
- 1/2 cup mushrooms, quartered
- 1/2 cup broccoli florets, trimmed and cut into smaller pieces
- 1/2 cup carrots, sliced
- 1/2 an onion, sliced
- 1/2 red bell pepper, sliced
- 1 Tbsp olive oil
- 1/4 cup balsamic vinegar
- 1 Tbsp minced garlic
This recipe calls for fresh veggies, not frozen veggies. If you do use frozen vegetables I am not sure how it will come out, but you are welcome to try.

How to Cook Vegetables in an Air Fryer
Have you ever asked yourself: can you cook vegetables in an air fryer? If so, then the answer is a big yes! Cooking vegetables in an air fryer is so easy and results in the best tender vegetables that the whole family will love.
Now that we know that we can make air fryer veggies the next step is preparing a variety of vegetables.
โFirst, preheat the air fryer to 390 degrees F to allow it to warm up while you prepare the vegetables.
Slice the bell peppers, carrots, zucchini, and other vegetables.
โThen combine the balsamic, olive oil, minced garlic, salt, and pepper in a small bowl. Whisk to combine.
Next, you will need a large mixing bowl and a pair of silicone tongs.
Transfer the prepared vegetables to the large bowl and add the balsamic mixture.
Toss to thoroughly coat the vegetables with the mixture.
Then place the seasoned vegetables into the air fryer basket in the air fryer.
How Long to Cook Vegetables in an Air Fryer
The cooking time for air fryer mixed vegetables may vary slightly depending on which air fryer you have. One air fryer may need 18 minutes while a different air fryer model may need 20. In general, the time should be quite close, but feel free to adjust the cook time as you see fit. No matter what, cooking vegetables in an air fryer does not take a long time at all.
Cook the air fryer mixed vegetables for 8 minutes, then toss or shake and cook for an additional 6-8 minutes. If your vegetables are not in a single layer in the basket, make sure to give it a few more tosses/shakes in between as it cooks to ensure the hot air reaches all sides of the vegetables.
Use silicone tongs when tossing the vegetables to avoid scratching the air fryer basket.
You can add a few additional minutes if you think your Ninja air fryer vegetables need more time. The 16 minute cooking time results in a nice combination of both tender and firm vegetables.
When the air fryer mixed vegetables are finished remove them with the tongs and serve immediately.
Easy Air Fryer Vegetables
The best way to enjoy this easy side dish is right away with your favorite meal. It is a great side dish to serve with chicken breast or air fryer steak.
Store leftovers in an airtight container in the refrigerator for 3-5 days.

Instructions
- Preheat the air fryer to 390 degrees F while you prepere the vegetables.
- Slice, trim, and quarter teh vegetables.
- In a small bowl combine the balsamic vinegar, olive oil, minced garlic and salt and pepper.
- Whisk to combine.
- Transfer the prepared vegetables to a large mixing bowl and add the balsamic mixture.
- Toss to coat.
- Place the seasoning vegetables in the air fryer basket and cook for 8 minutes.
- At 8 minutes toss or shake the vegetables.
- Cook for another 8 minutes.
- If you feel your air fryer mixed vegetables need more time you can add another minute or two. Make sure to toss the vegetables in the basket during the cooking process.
- Remove the air fryer mixed vegetables and serve immedietely.
