These berry oat muffins are super healthy and easy to make. They are made with all gluten-free and dairy-free ingredients and are naturally sweetened with mixed berries and pure maple syrup.

Like other oatmeal muffins, these healthy homemade muffins are slightly more dense than other types of muffins, but they are still part of the best healthy muffin recipes.

Easy homemade berry oat muffins make a great afternoon snack or quick breakfast when you are short on time. They are a tasty compact treat to enjoy anytime. My daughter loves these berry oatmeal muffins plain, whereas I like them with a little grass-fed butter.

What You Need to Make Healthy Berry Oat Muffins

This triple berry oatmeal muffin recipe is gluten-free. If you often bake without wheat then you should have most of these ingredients in your pantry already. If you don’t, then you can easily find them at the local grocery store, or online. 

  • 3/4 cup gluten-free oat flour
  • 1/2 cup gluten-free rolled oats
  • 2 Tbsp chia seeds
  • 2 Tbsp coconut flour
  • 1 1/2 tsp baking powder
  • 1 egg, room temperature
  • 1 cup frozen mixed berries
  • 2 Tbsp coconut oil, melted
  • 1 1/2 tsp vanilla extract
  • 1/3 cup pure maple syrup
  • 2 Tbsp almond butter (or other nut butter)

There are so many great options for gluten-free baking. Oat flour is naturally gluten free, so for these healthy berry oatmeal muffins, I am using oat flour. This is the oat flour used in this recipe, and this is the rolled oats. I tend to stick with gluten free rolled oats, and not quick oats, or any other type of oats.

These berry muffins are naturally sweetened with maple syrup and frozen mixed berries. You can use any combination of mixed berries that you prefer. I am using a combination of frozen strawberries, raspberries, blackberries, and blueberries, similar to these here: mixed berries

To make homemade muffins you will also need a muffin tin and muffin liners. I love these parchment paper liners

How to Make Mixed Berry Oat Muffins

First, preheat the oven to 350 degrees F. 

In a large bowl, add the oat flour, and the rolled oats.

Then add the chia seeds.

Next, add the baking powder, and coconut flour.

In a separate small bowl combine the frozen mixed berries with the coconut oil. Heat in the microwave in 30-second intervals until the berries thaw, and smash with the back of a fork.

In another separate bowl combine the maple syrup, almond butter, and vanilla extract. Stir to combine.

Pour the maple syrup mixture into the dry ingredients. Stir to combine.

Next, add the berry mixture to the bowl. Stir and then let the muffin batter sit for five minutes to allow the ingredients to meld and absorb.

How to Bake Mixed Berry Oatmeal Muffins

First, line a muffin pan with muffin liners.

Then use a 1/4 cup measuring cup to scoop the muffin batter into the muffin cups.

If you have any fresh berries on hand, you can drop a few berries into the tops of each muffin. This is completely optional.

Place the muffins in the preheated oven and bake for 9-10 minutes or until the muffins pass the toothpick test. 

Remove the berry oat muffins from the oven and place on a wire rack to cool.

Enjoy these berry oat muffins with your morning ta or coffee, as an afternoon snack, a quick breakfast or toss in a lunchbox for an easy school snack.

These mixed berry muffins are not overly sweet, and have a nice balance of berries and oatmeal. They truly taste like berry oatmeal, but in muffin form.

Store leftover oatmeal berry muffins in an airtight container in the refrigerator for 3-5 days, of freeze for longer storage, and heat as needed one at a time.

Ingredients

  • 1 cup frozen mixed berries

  • 1 1/2 tsp vanilla extract
  • 1/3 cup pure maple syrup
  • 2 Tbsp almond butter (or other nut butter)

Instructions

  1. Preheat the oven for 350 degrees F.
  2. In a large bow, combine the oat flour, oats, chia seeds, baking powder, and coconiut flour.
  3. In a separete small bowl combine the coconut oil and frozen mixed berries. Heat in the microwave in short intervals until berries are thawed. Use teh back of a fork to mask the berries and combine the coconut oil.
  4. Use another small bowl to mix the maple syrup almond butter and vanilla extract.
  5. Add the maple syrup mixture to the dry ingredients and stir to combine.
  6. Then add the mashed berries to the bowl and stir . Let the muffin batter sit for 5 mintues to allow the ingreints to meld, and let the chia seeds and coconut flour absorb the wet ingredients.
  7. Line a muddin tin with paper liners and scoop the muffin batter into the muffin cups.
  8. Bake for 9 minutes or until the muffins pass the toothpick test.
  9. Remove and place on a wire rack to cool.
  10. Enjoy
