Keeping healthy muffins in the house is always a great way to stay prepared and avoid snacking on unhealthy foods. This oatmeal blueberry muffin recipe makes the best blueberry muffins that the whole family will love. They are super moist and are one of our best healthy muffin recipes.
While oatmeal muffins are often dense and can sometimes be on the dry side, these healthy blueberry oat muffins are kept fresh and moist with juicy blueberries and unsweetened applesauce. They are perfect for an afternoon snack or easy breakfast to enjoy with your morning coffee or tea.
What You Need to Make Healthy Blueberry Oatmeal Muffins
To make these healthy blueberry muffins with oats you will need a few of my favorite ingredients for gluten-free baking. You can easily find these ingredients at your local grocery store or online.
- Dry Ingredients
- 2 cups almond flour
- 1/2 cup coconut sugar
- 3/4 cup gluten-free rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- Wet Ingredients
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1/4 cup avocado oil
- 1 tsp almond extract
- 1 egg, room temperature
- Fold ins
- 1 1/2 cups fresh blueberries

For the flour, I like to use Bob’s Red Mill gluten-free almond flour and this gluten-free rolled oats. I tend to stick with gluten-free rolled oats, and not quick oats, or any other kind of oats when baking oatmeal muffins.
The almond extract gives these blueberry oat muffins a nice hint of almond. If you are not an almond fan, you can swap it out for vanilla extract if you prefer.
To make these healthy oatmeal blueberry muffins you will also need a muffin tin, muffin liners, and a stand mixer, or hand mixer.
How to Make Healthy Oatmeal Blueberry Muffins
First, preheat the oven to 350 degrees F.
Then add the almond flour, and coconut sugar to a large bowl.
Next, add the rest of the dry ingredients to the bowl.
Add the almond milk to the bowl.
Then add the avocado oil, applesauce, and vanilla extract. Recipes that use applesauce are often lighter and healthier.
Use a stand mixer, or hand mixer and blend until smooth.
When the muffin batter is smooth, add in the rolled oats and mix a little bit more.
After you mix the batter, fold the blueberries into the batter.
How to Bake Healthy Blueberry Muffins with Oats
Line a muffin pan with paper liners.
Scoop or spoon the fresh blueberry muffin batter into the muffin cups. Use a 1/4 cup measuring cup to ensure the muffins are all the same size.
Place the muffins in the preheated oven and bake for 19-20 minutes until golden brown, or until they pass the toothpick test.
When done, remove the muffins from the oven and place them on a wire rack to cool.
Healthy Blueberry Muffin Recipe with Oats

Make these easy healthy blueberry muffins a part of your healthy breakfast when paired with your favorite coffee, tea, or smoothie. They have a light, cake-like texture. The abundance of juicy blueberries in the recipe makes these muffins very moist. If you find them to be ‘too moist’ (is that even a thing?), if you do, you can reduce the blueberries to 1 cup.
Store leftover muffins in an airtight container for 3-5 days in the refrigerator. These easy blueberry oatmeal muffins also freeze well for later.
