These are the rolled oats that I always use. I recommend using these (gluten-free rolled oats), and not quick cooking oats, or steel cut oats. For gluten-free flour, I tend to use 1:1 baking flour, you can find it here: gluten-free flour. If you do not have vanilla bean powder then you can use vanilla extract. For 1/2 tsp of vanilla bean powder, you would use 1 tsp pure vanilla extract.
You will also need a muffin tin and muffin liners. I love these parchment paper liners when making the best oatmeal muffins.
How to Make Healthy Cinnamon Oatmeal Muffins
Preheat the oven to 375 degrees F.
First, pour the almond milk into a large bowl.
Then add the apple cider vinegar and the rolled oats to the bowl. Stir together and let the oats soak for about 20 minutes.
After 20 minutes, add the baking powder, baking soda, cinnamon, vanilla, and salt to the soaked oats.
Then add the oil to the bowl. If you don’t have avocado oil, you can also use coconut oil. I love to use coconut oil in baking, but sometimes my husband thinks he tastes the coconut. (I don’t notice it). So, I’ve been trying avocado oil in place of coconut oil lately.
Next, add the maple syrup.
Then add the applesauce. Recipes that use applesauce are great because you can use storebought, or make homemade applesauce with my easy applesauce recipe.
Lastly, add the gluten-free flour to the bowl.
Stir to combine.

Line a muffin pan with paper liners.
Scoop the muffin batter into the muffin cups. Use a 1/4 cup measuring cup for the perfect muffin size and to ensure the muffins are all the same size and bake evenly.
How Long to Bake Cinnamon Oatmeal Muffins
Place the muffin pan in the preheated oven and bake for 14-15 minutes until golden brown.
Test the muffins with a toothpick to make sure they are done. Stick a clean toothpick into the center of a muffin, and if the toothpick comes out clean the muffins are done. If the toothpick comes out wet with batter then they need a few more minutes.
Let the healthy oatmeal cinnamon muffins cool on a wire rack for a few minutes before removing them from the paper cups.
As the healthy cinnamon oatmeal muffins cool the paper liners will fall away from the cooled muffins. I love these parchment paper lines because you won’t have to worry about your tasty cinnamon oat muffins sticking to the liner.

These muffins are great for busy mornings, they make a quick breakfast as you are running out the door. This is a great recipe to make for the kids, for an after-school snack.
Store your leftover muffins in an airtight container in the refrigerator for 3-5 days. Or freeze them and store them in a large zip-loc bag in the freezer. Freezing muffins make it easy to grab one, thaw, and easily heat up in the microwave or toaster oven.
Enjoy these healthy oatmeal cinnamon muffins with your morning coffee or tea and with a little grass-fed butter, or jam.
Because these muffins are made with oatmeal they are a little dense and quite filling. This is part of what makes them such a great delicious breakfast option.
