- 1 cup Rolled Oats ( I use the gluten-free version- HERE)
- 2 bananas
- 1/2 cup pecans or walnuts
- 1/4 cup almond milk (I always opt for the unsweetened)
- 1.5 tsp cinnamon
- Protein powder – 1 scoop (this is the vegan protein powder that I use: HERE)
- 1 tsp baking powder
- 1 tsp vanilla extract
- Optional 2 Tbsp sugar or sweetener ( I prefer raw honey or agave nectar for vegan option)
- Muffin pan
How to Make Easy Banana Nut Bread Muffins
Considering I have a huge sweet tooth I always tend to have snacks on hand. But I am also quite a committed healthy eater, and eat clean about 98% of the time, which has helped me to lose a total of 50 lbs! (You can read about my weight loss journey here: Clean eating) Whether I have a stash of healthy muffins or berry donuts in the freezer or chocolate energy bites in the fridge I always enjoy my sweet treats without the added sugar. This recipe for banana nut bread muffins is the perfect sweet snack when you just need a little something. Plus the kids love them too, which is an added bonus.

Always gather your ingredients first. There is nothing worse than starting to make banana nut bread muffins and realizing that you are missing ingredients. Of course, if you prefer your banana nut bread recipe made in the form of a loaf instead of muffins you can easily toss this recipe into a bread pan instead. I prefer the muffins because it helps to regulate portion control in a way 😉

Coat a muffin tin liberally with nonstick cooking spray, or use those paper muffin liners for easy cleanup.

Preheat oven to 375℉.

Grab a fork and mash two bananas in a large bowl. The riper the better. The bananas tend to be the sweetest when they are ripe and the peel is starting to spot. Make sure to avoid the green bananas, those are just not ready yet.

Mix in the rest of the ingredients. You can use no sweetener, especially if your bananas are super ripe, or honey, agave nectar, or stevia. I prefer to use as little as possible.
- You can use almond milk from the box or homemade, I like to stick with organic and unsweetened. This is how I make my own almond milk.
- Don’t forget to add your protein powder if you are using it.

Scoop your banana nut bread mixture into your muffin tin to the rim. These healthy banana nut bread muffins really do not rise much at all so you don’t have to worry about overflow.

Bake for about 20-22 minutes until edges are golden brown. Stick a toothpick in the center of a muffin to make sure they are fully cooked. If the toothpick is still wet, give it a few more minutes.

Once cooked, remove the banana nut bread muffins from oven and let cool. If you are intending to freeze them wait until they have fully cooled and then you can place them in a freezer safe bag or container in the freezer. Don’t forget to mark the contents and the date!
