Homemade Mashed Turnips and Parsnips Recipe

- 2 medium parsnips (appx 1 cup chopped)

As always, let’s start by gathering our ingredients. This may be one of the simplest recipes to make. Have you ever wondered how to cook turnips? For this recipe, you only need turnips and parsnips. When I make this for just myself I opt for 1 turnip and 2 parsnips.
Parsnip Vs Turnip – What is the Difference Between Parsnips and Turnips
Both parsnips and turnips are root vegetables, but they have very different flavor profiles. A parsnip is a long vegetable shaped like a carrot but white in color. Its flavor is more earthy than a carrot, and less bitter than a radish. Whereas, turnips are round in shape, with white and purple coloring on the outside and white on the inside. The texture is similar to that of a potato but with a slightly mild bitter taste. These white vegetables are often used in soups and stews and make a perfect low carb alternative to standard mashed potatoes.

Prep:
To prepare your turnips, use a vegetable peeler to peel the skin from your turnips and trim the ends.
Next, cut your peeled turnip into 1-2″ small chunks.
Then trim and peel the parsnips too.
Cut your parsnips into chunks as well.
Cook:
Place the parsnip and turnip chunks in a large pot with cold water and bring to a boil over high heat. Fill the pot with enough water to just cover the veggie chunks. Cook the turnips and parsnips in boiling water until fork tender. Approximately 10-15 minutes.
Once fork tender remove the boiled parsnips and boiled turnips and drain them from the water content. I love my mesh strainer for this.
Mash:
Return your root vegetables to the pot and grab your masher. Mash your parsnips and turnips with your masher. If you do not have a potato masher you can use a food processor, or immersion blender to mash the turnips and parsnips.
Mash your parsnips and turnips thoroughly until there are no more chunks. Salt and pepper to taste.
Delicious Turnip and Parsnip Mash
The main difference between mashed potatoes and this mashed turnip and parsnip mash is that parsnips are a slightly sweeter cousin to the carrots. So your creamy mashed turnips with parsnips will have a slight sweetness.

Store leftovers of your parsnip turnip mash in an airtight container for 3-5 days in the refrigerator. This recipe is for one serving, if you are feeding a lot of people you will need to adjust the recipe to the amount of people you are feeding.
