What You Need to Make Healthy Hollandaise Sauce

To make homemade healthy hollandaise sauce you will need a few simple ingredients. 

  • 2 egg yolks
  • 1/3 cup ghee, melted
  • 1/4 tsp paprika
  • 1-2 Tbsp lemon juice
  • 1/2 tsp dijon mustard

To make this hollandaise recipe I always opt for the freshest and most organic ingredients. When you use organic pasture-raised eggs you will see that the egg yolk is a bold bright orange. With lesser-quality eggs, the yolks will be cloudy and light yellow. These are the eggs that we like to use: organic eggs

Traditional hollandaise sauce uses melted butter. Instead, I am using ghee for this healthier hollandaise sauce recipe. Ghee is clarified butter; made from 100% grass-fed butter. It is lactose and casein-free for those who can’t tolerate regular butter, or dairy products, or prefer a buttery sauce without using actual butter. Ghee is also gluten-free and paleo-friendly. How to Make Healthy Hollandaise Sauce

To make this creamy hollandaise sauce you will need a small high-powered blender, like the magic bullet, or an immersion blender.

First, add the melted ghee to the blender cup.

Next, add the lemon juice. If you love lemon, go with 2 Tbsp or half of a juiced lemon. If you prefer less of a lemon flavor then only use 1 Tbsp of freshly squeezed lemon juice.

Then add the egg yolks to the blender cup. Notice how bold and bright the orange color is? This is from pasture-raised chickens who spend time outside and not in conventional cages.

Lastly, add the paprika and Dijon mustard to the blender.

Blend until smooth.

If your hollandaise sauce comes out too thick you can add a little water to the blender to thin it out. Often the warmth of the eggs will soften the sauce as soon as you pour it over the dish making it not as thick.
