To make this easy poached egg and sweet potato recipe you only need a few simple ingredients.

When poaching eggs you always want to make sure to use fresh eggs. We use organic, pasture-raised eggs like the ones found here: eggs.
Many poached egg recipes are served over an English muffin or some type of toast. But since I tend to avoid gluten, I am using a toasted slice of sweet potato. You will be amazed and delighted with this option. A toasted sweet potato slice is a delicious alternative to bread or toast for your poached egg recipe.
How to Poach an Egg
It’s no secret that there are many different ways of poaching eggs. For this poached egg recipe, I am using a silicone egg poacher. It makes the best-poached eggs in just three minutes. You can find this particular egg poacher online here: egg poacher.
I’ll keep it simple because you can find the detailed instructions for how to use an egg poacher here: How to poach an egg in a poacher.
Simply, fill a pot with enough water to cover the holes in the egg poachers. Heat the water on medium-high heat until it starts to simmer.
Adding a splash of white vinegar to the water is often suggested. The vinegar will help to solidify the egg whites during the egg poaching process.
When the water begins to simmer crack the egg into the open hole. Lower the heat to maintain a gentle simmer.
This egg poacher simulates the same cooking process as a traditional poached egg water bath. The main difference is that the poacher keeps the egg contained in one place.
Once the egg enters the water you start a timer. The timing is very important. The perfect poached egg recipe relies heavily on getting the time right.
Cooking time for the perfect egg depends on how you like your eggs. For me, three minutes in the simmering water gives me cooked egg whites, with creamy, slightly runny egg yolks.
When the time is up, remove the egg poacher from the water, and set it aside.
Next, use a slotted spoon, like this one: spoon, to gently remove the poached egg from the hot water.
Transfer the poached egg to a paper towel to drain any excess water before serving. You can dab the spoon on the paper towel to drain off the water.
How to Make a Poached Egg Recipe on Sliced Sweet Potato with Hollandaise Sauce
While the egg is cooking in the simmering water prepare the sweet potato toast. With a sharp knife, cut a thin slice of sweet potato.
The sweet potato slice should be approximately 1/4″ thick. Put the sliced sweet potato in the toaster the same way that you would toast a piece of bread.
When the sweet potato toast ‘pops’ from the toaster place it on your plate. It should be slightly browned, firm, and soft. Not crunchy or mushy.

Next, carefully place the poached egg onto the sweet potato ‘toast’.
Then top the poached egg with hollandaise sauce. You can use store bought, or make your own homemade healthy hollandaise sauce.

Healthy Poached Egg Recipe with Sweet Potato and Hollandaise

Poached Egg Cook Time Adjustments
If you prefer very runny egg yolks then the cooking time should be reduced to between 2-3 minutes. If you like your eggs cooked all the way through to resemble hard-boiled eggs then increase the cooking time to 3:30 to 4 minutes.

Poached Egg Recipe with Homemade Hollandaise Sauce

Ingredients
- 1 slice form a medium sweet potato
- 1 egg
- homemade hollandaise sauce
- 1/4 cup sliced fresh strawberries (optional)
Instructions
- Poach an egg with you preferred method.
- I am using an egg poacher and poaching in simmering water with a silicone egg poacher for 3 minutes.
- While the egg cooks, slice a 1/4" slice of sweet potato and place the sweet potato slice in teh toaster the same way that you woild toast a pice of bread.
- When the sweet potato toast is ready place it on a plate.
- Remove the paoched egg from teh water with a slotted spoon and drain the excess water over a paper towel
- Place the poached egg onto the seeet potato 'toast' and top with hollandaise sauce.
- Serve with fresh strawberries or other fresh fruit.
