What You Need to Make Chocolate Chip Walnut Muffins

To make the best chocolate chip muffins with walnuts you will need a few simple ingredients. If you bake gluten-free often, then these should all be familiar to you. If not, then you can find them at your local grocery store and/or online. 

  • 1 1/2 cups almond flour
  • 1/3 cup tapioca flour
  • 2/3 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1/2 cup unsweetened applesauce
  • 3 Tbsp coconut oil, melted
  • 1/4 cup almond milk
  • 1/2 cup dark chocolate chips, plus more for the tops
  • 1 cup chopped walnuts

Almond flour is a popular flour used in many gluten-free recipes. Both almond flour and tapioca flour can be found online with a variety of other gluten-free flour and products. Find them here: almond flour, and tapioca flour.

I like to use coconut sugar in place of brown sugar, or other refined sugars because coconut sugar is a lower glycemic sugar. It is less likely to cause a sugar spike, making it a healthier option. This is the coconut sugar that I use: coconut sugar.

For the chocolate chips, my favorite are these 85% cacao dark chocolate chips. They are dairy-free and made from real cacao, which makes them not as sweet as traditional milk chocolate chips, but a truer actual chocolate. Get the cacao chips online here: dark chocolate chips.

You will also need a muffin tin, hand mixer, and muffin liners. My favorite are these parchment paper liners because the muffins don’t stick to the liners. Get them here: parchment paper muffin liners.

How to Make Walnut Chocolate Chip Muffins

First, preheat the oven to 350 degrees F.

Then add the almond flour to a large bowl, and add the coconut sugar.

Next, add the tapioca flour, baking powder, baking soda, and salt to the bowl.

Whisk the dry ingredients together and set aside.

In a separate bowl add the eggs and the applesauce. Use store-bought, or make your own with my easy applesauce recipe.

Then add the almond milk.

Add the vanilla extract and the rest of the wet ingredients. Whisk to combine.

Then pour the wet ingredients into the dry ingredients.

Use a stand mixer, or hand mixer and mix the muffin batter until smooth.

Next, fold the walnuts and dark chocolate chips into the batter.

How to Bake the Best Gluten Free Chocolate Chip Walnut Muffins

Line a muffin pan with paper liners, and portion equal amounts of muffin batter into each muffin cup. Top the muffins with a few chocolate chips.

Bake the muffins for 18-20 minutes until golden brown, and until they pass the toothpick test.

Remove the muffins from the oven and place on a wire rack to cool.
