- Gather your ingredients. Preheat the oven to 350 degrees. In a powerful blender, grind the oats into a flour being sure to leave some oats intact for texture. This is the blender that I have, I love it because it does just about everything! (HERE)
- In a large bowl, combine the oats, chia seeds, baking powder and coconut flour in a bowl.
- In a microwave-safe dish, heat the berries and coconut oil until berries are mostly thawed. Use a fork to mash the berries until chunky.
- Whisk together the stevia, almond butter, and maple syrup.
- Pour the syrup mixture into the dry mixture and stir.
- Add the berry and oil mixture and mix until coated. Finally, add in the egg and whisk until everything is sticky. Let sit on the counter for 6-10 minutes (this allows the chia seeds and coconut flour to absorb the liquid and helps bind).
- Prepare your donut tray. Portion the mixture into the donut tray and bake for 12 minutes. Rotate the pan and bake for 6-7 more minutes. Remove from the oven and let cool for forty-five minutes in the tray before removing.
Makes 6 donuts.
Enjoy!
